Baked apple breakfast:

one small granny smith apple, core/seeds removed

5 or 6 sprays of "I can't believe it's not butter" spray

1 tsp cinnamon

1 packet of splenda or stevia (or real sugar, if preferred)

2 TBSP of your favorite high fiber cereal


fill core of apple with ingredients, and microwave until soft. Everyone will want to know what you are eating!

Yes it is in the original book. It calls for egg beaters but I use real eggs because we have chickens.

I should make those for my husband. They sound great, and low carb. Unfortunately for me, I don't eat eggs.

Just made a batch of whole wheat cheesy blintz-pancakes this morning, and ziplocked the extra portions for quick-grab breakfast.

The recipe is in my cookbook(accessible from my sparkpage-- high in protein, and low in fat, with reasonable carbs. Yum!

I'd like to revive this thread: I'm always looking for both quick, healthy "on the go" breakfast ideas, as well as slow-cooked weekend breakfast menus.

I'm currently in a natural ground peanut butter on alvarado st. bakery essential flax bread, with sugar free preserves "rut".

What do u guys eat for breakfast?

EASY RECIPE

A Filipino-Style Breakfast

Rice
Salty Duck Eggs
Tomatoes, chopped

This is a typical Filipino breakfast. You have a serving of rice with a salty duck egg and tomatoes. The tomato is used to weaken the salty intensity from the eggs.

The eggs are an acquired taste. If you don't like them, I'm not sure you'll develop a tolerance for it. But a pack of six is costs around a couple bucks and has a longer shelf life than regular eggs. If you don't like them, you can give them away. If you do like them, they sure make breakfast a lot easier and cheaper. I have a tendency to have a delayed breakfast because I'm not motivated to make everything so early. One more thing, baby tomatoes won't cut it.

My philosophy is to have as many things pre-cooked or selecting the simplest meals, so it's a matter of assembling everything.

1) Make oatmeal with milk and dried fruits such as raisins, cranberries, or apricots.

2) Rather than buying prepackaged, preflavor oatmeal packets, make them yourself. Prestir them apple flavors, brown sugar and nuts, dried apricots, or dried berries, etc. Use make them in oatmeal.

3) Make a bunch of hardboiled eggs ahead of time. You have them with steamed asparagus, also cooked ahead of time. Or put them in a chef's salad: lettuce, ham, cheese, and tomatoes.

4) Here's a Japanese-inspired one: Toasted bread, slathered with butter, and furikake. So good! Furikake is Japanese seasoning that's eaten with rice. I love it on bread!!!

5) Grilled Cheese and Ham Sandwich

6) Poached eggs in tomato sauce with toasted bread

7) Fried eggs with salsa verde and bread

8) Breakfast Smoothie

9) Granola with yogurt and fruit

10) Smoked Salmon with Hollandaise sauce on Bread
