New Year's dinner:
Ham, baked. No glaze, or glaze with honey. Put pineapple slices on the top.
Black-eyed peas, from scratch. Add lean meat for seasoning, or just seasonings (not salt).
Rice, use brown rice, or skip rice altogether (Southern cooking enthusiasts, I apologize! I can't skip rice, either)
Greens. Collards, mustards, turnips. From scratch, use lean meat for seasoning, or just (no salt) seasonings. Either boiled or steamed is great. Pan-"fried" is also very good. You can use Pam or EVOO. Non-stick pans really do not need alot of oil (as well as a really-well-seasoned cast iron skillet, a must in Southern kitchens!)
