I need to get in on this challenge. I've really been into raw vegan recipes lately, I won't go completely raw vegan but I want to incorporate a lot more!

I was inspired by CITYZOZO's blog that I wanted to Challenge ALL Done Girls to eat MORE fruits and veggies.
Not just a standard of saying "I will eat 'More'." It is actually EATING more servings. Get in those fruits & veggies and feel so much better!

had 3 bananas, 1 1/2 cup sliced frozen peaches and a cup of water in a smoothie this morning. I am sure there was some lettuce and tomato in my walmart sandwich this afternoon, and that is all I got for Monday. Better on Tuesday! emoticon

Ate 2 big plums, a peach, had lasagna with artichokes, spinach, tomato,mushrooms, and onions in it, and will have a bowl of blueberries with some yogurt for dessert.

Husband is making eggplant Parmesan for dinner.

I keep a boat load of roasted veggies on the counter for our family to snack on.

Yesterday it was roasted mushrooms, onions and carrots.

Today....going for roasted red and yellow and orange peppers, string beans, mushrooms and onions.

I have been packin in the veggies & fruits daily!

Plus we had a Fish Fry this weekend and I made some real healthy food by choice to go with the fish & fixin's!

Tossed Spinach salad, veggie noodles w/melody summer veggies & extra virgin olive oil-n-seasonings!
Gobbled it up they did!

You guys are doing awesome getting in those Fruits & Veggie! I am so proud!

Weekend summary LOL:

Saturday went to lay with the band- had a cook out! OMG! I brought the Spinach Salad with my trimings! It was gobbled all up! I loved that it was a hit!
Later Sat eve I ate 1 cup mixed frozen fruits & tried to wind down after all that playin, singin & dancin! I just can't stand still when we play! The guys make fun of me... I don't care... I has fun! LOL
Sunday:
1 cup Silk Fruit & Protein & frozen mixed fruits
1 1/2c Spinach salad
1/2 c carrot slices
1/2 grape tomatoes
1/4 c cheddar veggie shred
1 c frozen mixed fruit

For today:

I decided to eat fruit for breakfast and had:
1/4 cantaloupe
1/8 fresh pineapple
1 small banana

Salad for lunch:
3 C Romaine lettuce
24 grape tomatoes
1/4 cucumber
1/8 fresh pineapple (on the side)

With dinner:
small sweet potato that I removed the skin and made into baked fries, yum!

Evening snack:
medium apple

I can't believe I ate so many fruits & veggies today!!!

I stopped at Aldi to get some fruits and veggies tonight and this is what I ended up buying:

1 cantaloupe
2 bags of navel oranges (4 lbs each)
1 container grape tomatoes
1 container tomatoes that are slightly bigger than cherry tomatoes
4 pineapples

That ought to help with this challenge!!!

Thursday was a crazy day for me...

Fruits & veggies were less today than i have been getting, but work was crazy & I forgot to eat? Wha? I'll do my best to not do that again. I was a hunger monster for dinner last night!

I was inspired by CITYZOZO's blog that I wanted to Challenge ALL Done Girls to eat MORE fruits and veggies.
Not just a standard of saying "I will eat 'More'." It is actually EATING more servings. Get in those fruits & veggies and feel so much better!
