amy, those zuchini chips sound great! gonna have to try that some time.
when we have gatherings, we always have a hummus platter on salad. Just make a nice simple salad (iceberg, chopped tom & onion, whatever) & mix it with some oil/vinegar. Then place it on a platter. Put a small tub of whatever hummus you like in the middle. Then take some smaller pitas (whole wheat ones work fine) and wrap them in foil. Put them in the oven on low just to warm. Cut them into smaller wedges & serve. I've also served this with sugar snap peas to dip in the hummus.

I was given a recipe for zuccinni chips but I don't think I spelled that right. Anyway you cut them into really thin pieces place them on a cookie sheet and sprinkle them with salt or parmesan cheese and bake them in the oven till they get real crisp and they are excellent.
You could try to do pineapple wrapped in turkey bacon.
Another great idea is to either make it your self or buy fresh salsa. Then get some low carb tortillas or other low carb wraps, cut them into pieces and bake in the oven until golden brown. They make great chips.

Hey everyone! I was just wondering if any of you might have a good recipe for some snacks? Im having a jewelry party tomorrow night and need something! I was thinking about either a fruit dip or veggie dip and some fish eyes (pickels rolled in fat free creamcheese and ham). Any suggestions?
