The myth that if you eat in the evening you will have trouble losing weight is just that... a myth. Your body does its job no matter what time you eat, so just concentrate on eating the right amount of calories overall. :)
I wish I could help recommend what KINDS of foods to eat before bed, but I can't. :( A team for diabetics may actually be able to help you with this... there may be someone on one of the teams with the same problem.
You may just find that, over time, you'll be less and less hungry at night as you adjust your eating habits, and it may work itself out...
