I read this somewhere the other day and decided to try it out, and it was fabulous. Baked potato with avocado! I also added sprouts and some creamy soy herb dressing (I bet a light ranch would be great if you eat dairy). The half avocado had a substantial and creamy feel, like you'd normally get from butter and cheese, but with good fat instead of bad.
Your lunch sounds amazing. A few days ago (Thursday maybe?) I made a salad with baby spinach, clementine sections, sliced strawberries, chopped walnuts, soy feta, and honey mustard vinaigrette dressing. It was SOOOO good. Today, however, I had taco bell.
One of my cookbooks says you can freeze muffins in their little muffin paper in the muffin tin, then take them out and store them frozen. When you want one you can take it out of the freezer, drop it in a muffin tin and bake it for the normal baking time plus about 10-12 minutes. Since my biggest problem is resisting the temptation to eat half the batch, I may try this next time. If anyone's interested, I'll let you know how it turns out.
I tend to be a seasonal eater now. Right now my favorite fruits are clementine oranges (the price is right, just the right size, easy to take with you and a great fruit). At 79 cents a pound, this isn't the time for bananas right now.
My hardest thing to avoid right now are muffins. My kids love them and I have tons of recipes. Even after changing the recipe to a healthier version, they still tend to be to high in calories. When I make them I usually take a teaspoon of batter out of each muffin and make one smaller one for me. The kid s don't realize that theirs is just a tiny smaller.

MY MOTIVATION - My 8 yr old son said, "Mom I love you, will you play with my kids when I get married?"
I'm vegan so I eat tons of vegetables. I love making stir fry with half a cup of rice, tons of cabbage (like 3 cups raw), a handful of soybeans, and other veggies. The soybeans provide protein, and the cabbage provides volume without the calories that additional grains would contribute. I use pam on the skillet and add a mixture of soy sauce, rice vinegar, hot sauce, splenda, ginger, and just a little bit of sesame oil so it's not cooked with much fat at all.
I normally eat really healthy things, but my one hang up is alcohol. I go out to bars with my friends a couple of nights a week. I usually get vodka and diet coke, which doesn't have an excessive number of calories. However, when I'm drinking I get snackie and make terrible choices about what to eat. For the new year, I seriously cut back on alcohol and when I do drink I'm trying really hard to stay on plan.
Like a lot of people here, even though we've been on sparkpeople a while I just recently got serious about my health and weight loss. Since October I've lost over 20 pounds, and now I'm going to the gym almost every day. One of my friends called me a "gym rat" and I sort of took it as a compliment.
