I don't think I'm ready to do total vegan...although my "heart" tells me I ought to...but ovo-lacto might just be do-able. Eggs, cheese and yogurt...just don't know if I can do without these at this point.

I definitely did this at breakfast today and yesterday. I don't usually eat meat then. I really don't eat much meat at all.

I got over my Costco roast chicken habit, but that was hard. It's higher fat than I'm eating now. I've turned into a flexitarian w/o trying. I've been lacto-ovo veg, so I really like this flexitarian thing.

I am still on this "bean" kick where I buy bags of dried beans...black beans, 15 bean variety pack, roman beans, garbanzos etc. I soak 'em up and make either hearty vegetable-bean soups for dinner or various types of hummus for dipping my fresh veggies into...which makes me a yummy lunch!

Happy WEEKEND to you!

Your challenge this weekend is to have ONE or more MEALS WITHOUT MEAT.
This might sound difficult, but it isn't. As food prices go up (especially meat), it is good to find other ways to get your protein

Here are some suggestions:

Breakfast:
Whole Wheat Toast & Jam
Cup of yogurt
A banana

Lunch:

Peanut Butter & Jam Sandwich on Whole Wheat Bread
Cup of Bean Soup
Carrots, Jicama, and Celery sticks
Orange

Dinner:

Ground Soy crumbles, Whole Wheat pasta, and marinara sauce
Grilled vegetables
Large salad sprinkled with sunflower seeds

Dessert:
Fruit Sorbet

This CAN BE DONE! Give it a try. Remember that:

*Soy (i.e. Tofu and soy products)
*Legumes (i.e. beans, beans, beans)
*Peanut Butter (i.e. nuts are great)
* spinach
...all have protein. Make sure to read your labels.
Can you do one or more meals without meatthis weekend?
