Go to www.chocolatecoveredkatie.com and under recipes, look for Baked Beans in a Crockpot. It is excellent.

I'll swing by the library soon, if it's not there I can do an interlibrary loan.

Thanks!

No, but that sounds amazing too. It should work in the crock pot too, Lentils cook quickly, so again, try it out before you have to leave the house for work. Just to make sure you have enough water in the pot.

I looked too, but cannot find her recipe online. The Everyday Happy Herbivore cookbook is one I can really recommend. Maybe you'll like it too if you get it.

I love the Happy Herbivore Moroccan Stew - it's in the Everyday Happy Herbivore Cookbook.

It's not a slow cooker recipe per se, but what I do is just take about a pound of dried beans and about 5 cups of water. I add in the spices and other vegetables. Turn on low, and 8 or 9 hours later the dish is deelish.

Try it out some time before you go to work, just so you're sure that it works for you.

I really love this dish. We are just 2 people in our family and there are always several meals out of that one recipe.

Well do you think you could be more specific? I slow cook black beans up to have packaged in the freezer for things that are easy to put together. But I was thinking more complete meals already hot and ready.

I work an 8-5 job and would love to get home to a delicious meal that I didn't have to fuss over.

I have one so far that I LOVE, its so good. I make it once a week and while I'm not tired of it, the SO probably would like something different.

Does anyone have any go to favorites of their own?

By the way, this is the recipe I base my Veggie Pot Pie recipe on:
