This works year round:

1 banana
Tofu - about 1/2 the volume of the banana
Raisins - 1 serving
Cinnamon

Mash the banana and tofu together. spray or oil a small frying pan. Put all ingredients in the pan together and heat. Delicious for breakfast!

Just thought I'd share a really easy soup I just made up that is very fall-like:

Acorn squash soup-

1 small acorn squash
1 teas. Bragg's aminos
1/2 teas garam masala or to taste (I like Penzey's)
1 cube veggie bouillon low salt
1 cup water

Quarter and de-seed the acorn squash. Steam in a medium sized pot until soft, about 10 minutes. Scrape out the webbing (I find it's easier to do this when it's cooked). Cool enough to handle, then scoop out cooked squash. Add to leftover water in pot, and add in enough water to equal about 1 cup.
Add in boullion, Bragg's and garam masala and bring to boil. Blend in blender or use hand blender or magic bullet until smooth.

If you like it sweet you could add some sweetener or an apple during cooking. You could also top with toasted bread. I ate it plain and it was delicious!

Of course for me all root veg are favorites...love soups and stew in fall .. Kale looks great this year, and I have begun my harvesting. I have plenty of beets and have made them in Harvard sauce :) Gave some away to friends. Parsnips wonderful...roasted so sweet ! Butternut squash very nice this yr too. Gathering my herbs and making some teas for the fall as well :)

I like thick stews with crusty bread, oven-baked casseroles, and cheesy, gooey macaroni and cheese. Of course I always make lighter versions of these things, but I can certainly dream about those childhood faves.

Harvest time is wonderful!!! I love root vegetables as well as collard greens and most apples! It's funny, the longer I eat vegetarian/vegan foods, the better everything tastes! This evening I am cooking cabbage and potatoes.

This fall I'm totally obsessed with Macintosh apples cut up with cinnamon and Splenda sprinkled on top. Super yummy, and not too bad carb-wise. I'm also looking forward to getting some butternut squash soon!

We have a family tradition in our home that starts around October/November and ends after the new year. We have a special breakfast that my kids have enjoyed since they were little (they are now a teenager and preteen). Its pumpkin or spice pancakes served with homemade applesauce (absolutely no butter or syrup here!). Very healthy, and they are already asking for it!

I'm not much for pumpkin, apple cider and all of that but I do like to add cinnamon to my drinks & food as much as I can. I also like to eat soups, gumbo, soba noodles, apples and red potatoes so I can feel a little more satisfied with my meals!

Butternut squash by far. I love it roasted and it makes a yummy soup. Honeycrisp apples are in now and I love them -- wish they were a bit cheaper. Fortunately my store had them on sale. It's just me in the house so I don't mind spending a little more on food.

Here's a recipe for pumpkin custard. Tasty, and a cinch to make.

1 16-oz. can pumpkin
egg replacer equivalent to one egg
1/2 cup sugar
1/2 teaspoon ground cloves
1/2 teaspoon ground cinnamon
1/4 teaspoon gound ginger
1/2 cup warm water

Mix all ingredients together and heat over low temperature for 15 minutes, stirring occasionally. Pour into a bowl and refrigerate. (If you like you can add nuts or raisins to this recipe.)

JANKENT - I'd love to share my recipe for pumpkin custard but unfortunately right now i'm in the hospital (for treatment of depression) and i don't remember the recipe (it's at home). As soon as i'm discharged (next week hopefully!) i'll post the recipe. I've never prepared it with an egg replacer, but we'll see how it turns out!

I would love to know the recipe for pumpkin custard . I do use an egg replacer in most things and buy an egg yolk replacer that is very good. Pumpkin pie and pumpkin soup are a favourite of mine and I always use the seeds.

In Scotland it is haggis time but I make a vegan version that tastes divine. Neeps and tatties with vegan mince and dumplings is true comfort food.

Pomegrantes are starting to make their appearance at the markets, so fall can't be far behind. I'm waiting for quince and chestnuts to show up.

My favourite comfort food is savoury mince stew with loads of veg in it, slow cooked and using a good veg mince such as Vegusto sell or Linda McCartney. I make plenty and freeze some for when I need a quick meal. I also add curry powder to some the next day . Served with mashed potatoes or brown rice or quinoa.

Like most have said, I love butternut squash, sweet potatoes and apples. I love baking the squash or sweet potatoes with nuts and seeds. Yummers!

One other thing I really love in the Fall is something I call Harvest Rice. It's a rice dish made with green onions, apples, pecans, raisins and/or dried cranberries. It's topped with a garlic, lemon, olive oil dressing. You can have it warm or cold. It's a bit calorie dense, but it's delish and very festive with all of the different colours. I think pumpkin seeds would be a nice addition too. Haven't tried that yet though.

I don't see rutabegas in our stores or farmers markets. I guess they are a winter root...haven't tried putting them in my diet, but will consider them next time I find some.

rutabaga/swedes are my absolute favourite. I use them instead of potatoes in all the recipes. www.17recipes.com/rutabaga-latkes/ (I do not use bacon fat or eggs. Recipes are made to play with. I bake them instead)

It's a bit unwieldy to chop for the first time but nothing a good cleaver/knife can't handle.

Roasted pumpkin soup is awesome too.. Pumpkin, butternut squash, all of those lovelies..it is going to be so nice to have some cool weather so I can make soups again.

I'm not a summer fan, so I'm really looking forward to autumn! Woolly tights, winter coats, Christmas!! Cosy nights in! Anyway, I'm personally looking forward to super comforting oatmeal, made with almond milk and with cinnamon and dried fruits. Sometimes I soak my oatmeal overnight in Indian Chai tea. :)

Spicy Lime Cilantro Sweet Potates!!!! So easy, so good!!
Peel and cube sweet potatoes, roast in oven, let cool slightly, add fresh lime juice, cayenne powder, fresh chopped cilantro leaves. Done.
