We LOVE artichokes here, even my 7yo dd. We usually just steam them, but I love them in all sorts of foods.

They are also a great source of fiber.

Artichokes are great, tasty, low in calories, lovely texture. In Italy you can buy an artichoke paste you can use as a spread or just fold through pasta. I'd say the dip recipe is something like the same thing. Worth a try :-)

Love fresh artichokes and they are IN SEASON.........Like to steam up a bunch of them and dip them in mayo for a snack.. A bit of work, but when you get to the 'heart' there is much reward.

OMGosh I love artichoke, artichoke dip, artichoke on my pizza, fried artichoke (so bad but so yum!!), I even like regular artichoke hearts out of the can...yum yum yum yum

eating artichoke leaves with a little dip is a chore, but is kind of good too :o)
