I read Dr. Barnard's book, Power Foods. In it, he said that plaques are cleared out of the brain when we sleep! If we don't get enough sleep, we are flirting with Azlaheimer's later, and iron and copper get into the plaques to really scramble things up. So I can see why he would not like to see people taking in more minerals than they need. As an aside, iron creates free radicals in the blood vessels, a problem to the cardiovascular system as well. Getting enough iron is more of a concern to younger women, pregnant women, and children. I found out about Dr. Barnard's book from watching a lecture he gave as a fundraiser for my state's public television. Maybe your state will have it too. I got a copy of Dr. Barnard's lecture on DVD for contributing.

Nutritional yeast - I just watched Vegetarian Mashup on public TV, and a host made BLTs out of sliced tofu instead of bacon onto which nutritional yeast, soy sauce, and liquid smoke were added. http://delicioustv.com/blog/page/2/ It looked good, I might try it. I'm glad to learn that nutritional yeast has so much to offer health-wise.

I find that I can get almost all my vitamins and minerals through a plant based diet. Some of the exceptions are Vitamin D, Calcium and B-12. I bought Bragg's Nutritional Yeast and I sprinkle it over popcorn, add it to my vegan loafs, soups etc. One tablespoon has 160% B2, 180% B-1, 140% B6, 40% B-12, Folic Acid 40%, and a few more. emoticon I saw an episode of Doctor Oz when he had Doctor Bernard as a guest. He was explaining that we should be NOT taking a supplement with minerals in them as we can get them naturally and if we take a supplement as well, we are risking a build up of zinc, copper, and iron in any plaque that may build up in our brains. Not good as apparently there is a link to Alzheimer's. I think you can google Dr. Bernard on the Dr. Oz show. Very interesting! It's about 20 minutes.

First of all, meat eaters can have nutritional deficiencies too. Many people take supplements. I took a nutrition class at college several years ago and my book said that deficiency of pantothenic acid is rare. It mentioned avocados and whole grains as good sources. Heat easily destroys it. An online source suggested that human gut bacteria may be able to manufacture it.

thanks for all your answers.
imvegan, truth is that in my part of the world, there are not a lot of choices when it comes to green stuff, and whenever there is a choice, it is not an organic one (at least for my leafy stuff, i always choose organic).
i sometimes switch to broccoli, but i'm not a fan of it- its flowery texture is annoying to me and disgusts me.
what do you do about your pantothenic acid/b5?
i know about mushrooms, but they're kind of expensive to eat on an everyday basis, pity enough cause i'm a huge fan of them.

What kinds of veggies do you eat everyday? You need to eat a wide variety of them to get your vitamins. The BEST way to get your vitamins is from whole foods not from supplements. Chickpeas, peas, and kidney beans are high in zinc, as are other vegetarian foods and fortified cereals and breads. Vary your greens. I see you eat a lot of spinach. Have you tried Swiss Chard, kale, Collard Greens, etc. Those greens are packed with much more vitamins than spinach. I put greens in the soups and vegetable stews that I cook to up the nutrition. I just finished eating a bowl of lentil soup with Swiss Chard, carrots and potatoes. Humans need to vary their diet with lots of different colors of veggies to get all of their vitamins. Enjoy!

In addition to my MULTI vitamin- I take a good B COMPLEX supplement... and then also I take a LYCINE supplement that includes a good supply of zinc. I have never been found to be short on these. emoticon

I am NOT vegan.

zinc and b5 are the hardest. do you get enough of the above nutrients everyday?how?
