I can't link from my phone, but the blog 'oh she glows' has some great recipes for burgers and lentil loaf. They hold together really well and are very tasty!

I'm glad to get these posts. I'm trying veggie burgers ever since realizing that the brand I bought contains extra gluten. I'm not gluten sensitive, but I don't want to eat something that relies on it. I scanned the package to make sure they were non-GMO, but didn't read further. I'm still transitioning over from meat-based, still new.

The ones I tried last night were basic black bean/brown rice. Some of them fell apart, some didn't. I froze the two leftover ones that held together.

Looking forward to reading all the ideas!

When I make my own veggie burgers I use: Morningstar crumbles, 1 egg, little bit of bread crumbs, and whatever seasonings you want.

I use whole wheat bread crumbs and toasted pecans in my lentil burgers and it really works well.

If you use fresh peppers, cook them down a bit to reduce their moisture content. You could try same with the onion as that could be where your phantom mush is coming from.
Next tip is to try potato starch instead of flour. It has great binding properties and does a better job.
Last resort would be stir through a tablespoon of chia seeds in stage 2 of your recipe. While the mixture is resting the chia seeds will hunt down any excess moisture and mop it up. Promise!

Here are 2 excellent recipes.... Both are very firm when baked. (I don't like them pan fried. I made the NYTIMES one first and they firm up so well with the oats that I used oats instead of the bread crumbs in the PPK burgers and they are firmer that way too. ) So yummy! They firm up even more after cooling down and being reheated the next day. Both recipes can be frozen after cooking in zipper bags and then microwaved for just a minute and are delicious and ready in just a short time!

BTW I never made a burger with flour in it. All the burgers I have made have bread crumbs or oats in them..... maybe that is the reason yours are not solid.

They were definitely very mushy. Husband thought they were alright, and would eat them again if we can get the texture right. I am thinking of just using fresh peppers instead of canned/jarred peppers, not processing it so much, and I will try oatmeal in it. I did kind of use a lot more flour than it said, so it got a bit thicker with the flour, but was still quite quite mushy. But it was nice with a slice of mexicana cheese!

well I haven't had good luck with keeping burgers together...but looking at your recipe it seems like there are more wet ingredients than dry... so maybe try oats, rice, bread crumbs, ect

I am making a recipe making my own Veggie burgers. The recipe is for Mexican bean burgers. They smell quite nice, but they are still rather liquidy. I don't know what I did wrong. Does anyone make their own and can give me suggestions so i can form them into patty shapes better? right now, they are kind of blobby, and not really patty like. I was using some flour, which seems to help somewhat. but still not very patty like. I will put in the recipe and post it, if anyone wants to take a look at it. (Give me a few minutes!).
