I made this recipe from Mollie Katzen's book, "Still Life With Menu" yesterday. YUM!
Wonderful vegan soup, very creamy. The soup is pureed: potatoes, spinach, sauteed onions, & garlic, with cumin turmeric & pinch of cinnamon. The potatoes make it very creamy. It took 2 pounds of spinach. Wow!
I highly recommend Mollie's books for any vegetarian. They are not vegan books, though many recipes have no dairy.
