I will definitely try using hot water and starting the pot with the browning feature. I had noticed that some online instructions for cooking rice said add hot water, not cold.
Thanks for the advice. Can't wait to try it again.

I have never added dried mushrooms. But if I did I guess I would add them at the beginning.
A new trick that I use now for pressure cooking is to let my water begin heating in the cooker while I chop my veggies or prepare other things using the "brown" button. Then I toss the food in the cooker and hit the stop button and cover and set the timer. That way the water in the cooker is hot and it takes just a minute to build the pressure. This really helps me cut the time down to build pressure for some of the dishes. The cooker is sitting over there getting hot while I am slicing and cutting, then I toss in the stuff, push the buttons and off she goes and in a few minutes she beeps.

Okay, I'm putting the ingredients for your "fried rice" on my shopping list, IMVEGAN. I may add some tempeh to the dish. Have you ever added dried mushrooms and if so, did you presoak them and at which interval did you add?

IMVEGAN, we all LOVED your "Fried Rice." Everyone in the office ended up trying it and raving about it. We even discussed making this regularly.
Having never used a pressure cooker before we didn't realize how long it would take to heat up/build up pressure, but the actual cooking time was spot on. We also added some tofu with the veggies. Yumm!

Split pea soup in 8 min..... Almost miraculous isn't it? Was it good? I don't have to ask, I know it was. The pressure infuses the food with flavor. If you have a good recipe the food is wonderful.
I made a Tunisian tomato chickpea and collard green stew in my pressure cooker for supper. It is one of our favs. a little spicy with a lot of coriander and a touch of cumin. I used to cook it for hours. Now the total pressure cooked time is 12 minutes.

IMVEGAN, you've inspired me to break the pressure cooker I bought in August out of the box! I was telling a coworker about reading your recipe yesterday. So, tomorrow at work, two coworkers and I are going to make your "Fried Rice" recipe with my electric pressure cooker. I'll let you know how it turns out.

I have a Nesco Electric Pressure Cooker. I saw mine at Target. Here is the link
Re-read my brown rice "fried rice" recipe. It takes 8 minutes in my pressure cooker. I cooked for 7 minutes added the veggies and cooked for 1 more minute making a total of 8 minutes. Read your pressure cooker book, each cooker will take a little different time and a little different amount of water.

Wow! You all made a believer put of me. Seven minutes for brown rice!!!!!!! I use a Japanese rice cooker that takes about an hour and a half. Seven minutes!!!!!!!!!!! Woo Hoo Any recommendations on a brand name (if we're allowed ro do this). I love the electric idea. Thanks so much you two :)

That sounds yummy, IMVEGAN.
I do not presoak my beans; however, I cook them until the pressure cooker steams loudly, turn off & release the steam, drain, rinse, add more water then cook until tender. I believe this accomplishes the same as the presoak, without the prior planning. :D

I use mine several times a week. I have an electric pressure cooker. 8 minutes for brown rice. 8 minutes for chickpeas or other beans. (presoaked overnight) I always presoak and throw that water away to lower gas. Some folks don't have that issue. I don't anymore because I eat beans every day but I still presoak. I find it also helps to keep the beans whole and pretty.
I love Jill Nussinow's webpage Veggie Queen. I love my electric pressure cooker too because I can turn it on and walk away. Plus, it doubles as a slow cooker.
Yesterday I made pressure cooker "fried rice" It was just for me so I put 3/4 cup of brown basmati rice in my cooker and added 1 cup of water a splash of low sodium soy and a 1sp of rice wine vinegar and pressure cooked for 7 minutes. I quick released the cooker and added cut up carrots, red peppers, onions, cabbage, and mushrooms and pressure cooked for one minute. I quick released again and added broccoli and put on the top to steam for a minute. I did not pressure cook again and then stirred. IT was yummy!

It's a fast way to cook hard veggies, too, like potatoes, beets, etc. Anything that takes a long time to cook is faster in the pressure cooker. Brown rice...
I recommend getting a stainless steel one. The cheapies are aluminum. Yuck.
With the pressure cooker, you can make the equivalent of 10 cans of beans for the cost of about 1 can.

Ooohhh that sounds really yummy!! I don't own a pressure cooker, so it takes a long time for me to cook beans!! That just might be a good investment for my family though since we always seem to have dried beans in the pantry lol.

At 6pm, I decided to have kidney beans for dinner. Since I keep a variety of dried beans on hand, no problem. Before 7pm, I sat down to a lovely bowl of kidney beans cooked with garlic & spices and topped with 1.5 cups mixed: cilantro, green onions, orange bell pepper, and yellow mildly hot peppers. YUM! Love that pressure cooker. :D
