My son (15 yrs old) decided to go vegetarian about 2 weeks ago. My husband and I have been on the 17 Day Diet and eating the lean proteins. We are also eating tons of vegetables. I have decided to take on the challenge of cooking for my son and learning ways of adding the good carbs to my husband's and my diet. I think I've been rocking it!
All three of us love Indian food and we watch the food network all the time... Marcus Samuelson is a chef on there that cooks Ethiopian food. I found an article in this month's Food and Wine magazine for an Ethiopian dish with cabbage, carrots, onions and turmeric... Made that, it was fantastic! Then, I made a Spinach and Potato curry on Monday night.... Amazing! Then, last night, I threw together some leeks and cabbage and also did a butternut squash couscous.
I'm actually having alot of fun finding healthy, delicious recipes!
So excited about the 17 Day Diet. It has truly taught me new ways of eating and being healthy. Although I've not followed the daily cycles since I finished Cycle 2 at the start, I do tend to choose only foods from all three cycles. I incorporate the added carbs as I can and we are living a 17 DD Inspired life! Getting us to goal!
