I tend to eat a ton of fresh fruits and veggies, eggs, whole grains, and at least one processed carb product a day. Yup! I enjoy my soft taco sized flour tortilla to wrap my egg whites in. I also snack on very small amounts of carby snacks, such as 10 or so little pretzel snaps or whatever. It hasn't seem to have caused much of an issue with me. I'm sure I would be way skinnier if I eliminated more carbs but I think I'd also be super cranky and unpleasant to be around. ;)
Basically, I try to even everything out and/or balance. If I perhaps have a bit of pasta for lunch, I definitely will have a high protein meal, slimmer meal for dinner, even if the calories would be the same as if I had two carby meals.
I try not to be so concerned about how many carbs I consume. I eat whole grains in the form of cereals, pastas, and bread. I will occasionally have white, but have really come to enjoy the full flavor of whole grains. I eat an abundance of fruit and vegetables including potatoes and legumes. I try to get a serving of nuts everyday and/ or avocados. I have quit eggs and dairy recently (again) and am having good results. I've always enjoyed baking but have cut down drastically. The desserts, dairy and eggs are where my weight gain recently came in. I have always enjoyed good health...been vegetarian/ vegan over 36 years.
Since going vegan I don't follow the "recommended" guidlines. I usually eat about 300 grams of carbs a day on a 2000 calorie plan. I don't eat white sugar, but do use turbino sugar, and for the most part, I don't eat pastas or breads made with white flour.
I hardly ever eat grains and I'm careful about my legume and fruit intake. I get carbs from fresh vegetables mostly. I orient my diet to a more protein/fat one than a carb/sugar one. It's weird, every so often I'll have a gluten-free slice of toast. I love it and I immediately want 4 more slices. Sugar works on me this way, too. For me, leaving these things alone works out. Every body is different. Mine, if it gets a good dose of carbs at one time it ROARS for more.
I'm usually ~280 g carbs on a 1500-1600 caloric intake per day and eat whole grains but also happen to eat a regular white potato or pasta and occasionally make also white bread *gasp* in my bread machine. I believe that everything in moderation is ok (well, other than animal products, I don't consume any since I'm vegan) and my health & weight is proof that I'm right. I've always listened to my body and loved my starches *lol* and at a 5'8 height I'm between 125-129 lbs since over 12 years now! I eat a lot of veggies & fruits but if I'd leave out the starchy carbs, I'd be starving!
I avoid all processed grains... no bread, no wraps, no pasta. I avoid sugar as well. So every day I eat fruits, vegetables, whole grains (oats, quinoa, brown rice), beans/legumes and nuts/seeds. Period... about 200-300 g carbs per day.
