Any good suggestions for getting away from the "Rubbery" tofu texture? .......... Seems most things we prepare end up tasting like a tofu rubber ball .......... (other than that, I like it) ............ if that makes any sense!) ..............

oh that does sound good! (though i never have leftover baked tofu since it is a favorite snack, just as is!)

I like baked tofu in a Vietnamese cold noodle salad. I cook brown rice vermicelli and let it cool, cut up romaine, cucumbers, red peppers, julienned carrots, thin cut napa cabbage and add bean sprouts. Put a handful of the noodles on the bottom of a big deep bowl, add the veggies around the side and add tofu on top.

Nuoc Cham Sauce  (changed just a little to suit my taste)
1 clove garlic minced
1 small jalapeno chile cored seeded and minced
1/2 t of garlic chile sauce
2/3 cup hot water
1/3 c sugar
2 T fresh lime juice (about 1 small lime)
1/4 C vegan fish sauce is available if you can find it or sub soy sauce

Blend all ingredients in a blender until mixed.

Put veggies in your big bowl and add a small amount of sauce to your bowl. (1/4 cup) it is very strong and a little goes a long way. Have a bottle of hoisen sauce to squirt on top.
This is my families very favorite hot summer day meal.

yes!!! Put it in a pita with chopped vegetables, add it to a soup,
chop and mix with chopped potatoes and onions, then sauté for
a veggie hash!

Hello veggie friends!

I have some leftover baked tofu & as it's the first time I've used it I'm not sure what to do with it. Is it ok to eat cold in a pitta, for example?

Any tasty ideas gratefully received for this tofu virgin!
