Does anyone remember where we were all talking about kale chips? Someone posted an amazing recipe/video link and I wanted to try it, but I can't find where we were talking about it.

I am cooking the beans now but I am using white beans.

The beans made the best gravy but I think next time I will add some spices. It is good because it makes a great textured base. I am thinking of trying curry flavour.

I didnt puree like refried beans. I decided to let it remain a bit chunky.

Last night we made been burritos out of the pinto bean and had sauteed veggies on the side. We made up the burritos with shredded lettuce and salsa.

I like it as a dip with baked tortilla chips.

You can also serve it over brown rice or quinoa.

So good!

Liz, if I used the recipe as a side dish, what would you recommend to also go on the plate? (Veggies, grains, etc.) I'm just curious what you or others recommend, since this is sorta a "twist" on the usual side dish of plain beans and might call for different side dishes to compliment it.

Yes, thanks Liz...I've been needing a unique pinto bean recipe! Something that is versatile and can be used in different ways--so this fits the bill! Thank you!

Okay, no nice PDF on this one. Here it goes.

1 cup quinoa
2 cups veggie broth (or water)

Follow instructions on bag/box. Quinoa cooks up quickly and comes out nice and fluffy!

Heat up a large frying pan (or saute pan) on high. Give a quick shot of cooking spray and dump in a bag of frozen stir fry veggies and cook for about 4 minutes stirring every minute or so.

Combine the cooked quinoa and sauteed veggies and YUM!

Quick, easy, delicious, nutritious! Add a little salad and you're good.

Optional: I also pan sauteed up some diced tofu and added it to the mix.

I feel like 2 inches (of water) above the beans is too much. I do about 3/4 inch, but I'm home most of the time and can add more if I need to.

UPDATE:

Oops! all these years, I never saw the "drain off the excess water" part in the recipe! HA!

Well, in that case, add the 2 inches of water!

I use the whole bag of dried pinto beans (after rinsing and sorting out debris).

You can use a potato masher or stick blender depending on the consistency you prefer.

I've made this recipe about 10 times and each time they come out GREAT!

Use them for burritos, as a side dish as a dip for baked tortilla chips or with veggies. Add some salsa to them to spice them up!

So good! and cheap and easy.

Enjoy!

I did something super easy and delish with quinoa the other night. Let me know if you want that one too!
