Okay, no nice PDF on this one. Here it goes.
1 cup quinoa
2 cups veggie broth (or water)
Follow instructions on bag/box. Quinoa cooks up quickly and comes out nice and fluffy!
Heat up a large frying pan (or saute pan) on high. Give a quick shot of cooking spray and dump in a bag of frozen stir fry veggies and cook for about 4 minutes stirring every minute or so.
Combine the cooked quinoa and sauteed veggies and YUM!
Quick, easy, delicious, nutritious! Add a little salad and you're good.
Optional: I also pan sauteed up some diced tofu and added it to the mix.
