Some people like burgers without all the sodium and added perservatives. Well, here is one I use frequently. Had these over the weekend. They're GREAT! You can cut down on the sodium even more if you use dry beans in the bag rather than out the can.
This is one of the best that I have tried.
Black Bean Burgers
2 tablespoons olive oil
2 1/4 cups chopped onion
3 cloves garlic, minced
1 teaspoon salt
3/4 teaspoon ground allspice
3/4 teaspoon ground curry
2 large mushrooms, chopped
1 tablespoon flaxseeds
2 1/4 cups cooked (or two 14.5 oz cans) black beans, rinsed and drained
2 1/4 cups cooked long-grain brown rice
2 1/2 cups dry bread crumbs
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Drop onions and garlic in skillet, cook, and stir for a few minutes. Remove from the heat and transfer to a bowl. Pour the remaining ingredients into bowl, mixing thoroughly using your hands and ensuring to completely mash up the beans. It can be a little messy, so prepare yourself or get some kitchen gloves.
Form into 10 patties and place in the refrigerator long enough to get cold. They hold better that way. Heat the remaining oil. Fry the patties until golden on each side, about 10 minutes total.
To cut down on calories, you can heat the onions and garlic in the microwave and a little water rather than use the olive oil. Also, an alternative is to cook the burgers on a kitchen table top grill like a Hamilton Beach or George Foreman grill. The burgers don't come out so well in the microwave.
