nachos: low salt corn chips topped with chopped red and green capsicum, canned corn, mexican beans, onions and melted mozzerella. then top with mashed avocado, fresh salsa (finely chopped tomato, purple onion and cilantro).

OOOOHHHHH Yes, love it!!! Have had it for breakfast and dinner! I have been able to make vegan bisquits and gravy! Vegan benedict(my favorite all time breakfast) vegan quiche and frittatas. Once I found recipes for all these items, I was in heaven!! The only thing I miss is going out for breakfast, that is REALLY hard. There is one restaurant that I have heard of that makes vegan breakfasts, but I haven't been yet!

I love breakfast for dinner. Actually, I just love breakfast!! It used to be my favorite meal of the day, and then when I stopped eating eggs, it became kind of limited, now I have learned so many substitutes for my favorites that is my favorite meal again!!

When in doubt cereal is the way to go. I do like to do breakfast for supper sometimes. It's quick and easy. Fixing some eggs and maybe some pancakes or french toast

Other than cooking up the turnip in the pantry that needs to be cooked I don't know yet. Probably what I was going to have yesterday which was Asian veggie patties and a pasta side and veggie.

three pizzas with the base made out of whole wheat pita bread (what we call whole wheat lebanese bread in australia). One with red capsicum, green capsicum, my own vege spagetti base (garlic, tomatoes, onions, basil, oregano, tomato paste etc..) and non animal rennet low fat mozzerella on it. The other with the same spagetti base and mozzerella only with roasted pumplin and eggplant on it. Also a plain mozzerella and spagetti base one.

I wonder if adding a bit of flax seed meal to it would help bind it together more? just thinking about trying it.. but maybe adding some oats or flax meal to tighten it up a little.?????emoticon

That would be me on the Red Quinoa Loaf. As I said, it didn't turn out like much of a loaf. I think next time I will bake it in a small loaf pan instead.

1 cup cooked red quinoa, packed tightly
1/2 c chopped walnuts
1 green onion, minced
3 tbl. cashew butter
1 tbl. soy sauce
1 tsp. sage
2 tsp. thyme

Mix all ingredients together. Oil a bread loaf pan and fill with mixture. Press and flatten to shape in the pan. Bake in oven at 375 degrees until edges are firm and loaf is heated throughout, 35-40 minutes. Suggestion: use parchment paper on top and bottom to eliminate hard crust. (although I kind of liked the crunchiness) Serves 4. Hope you like it!

I made a seitan pot roast from vegcooking.com in the crock pot on Monday, so with the leftover vegetables-sweet potatoes, carrots, onions and gravy, I pureed them, sauteed some leeks and celery, added the puree, some lentils, some garbanzo beans I had leftover, cumin and curry and Viola, SOUP! It was really yummy, too. We had it with my very small homemade bread.

tonight my grandson came over. I am soo laughing.

I made tofu tacos - and served it on tortillas. He enjoyed it.

Then I look over at the kitchen counter and he is eating the tofu out of the container - plain. He loves it!

POTRIDGE: Thanks for the recipe, I think I could use soy milk for the milk and possibly egg replacer for the egg. I never understood why whoever created breadmakers made the pans vertical! I have two breadmakers and both are vertical. I haven't used them in awhile and I want to start making my own bread again!! Thanks again!

LEENIEB, My bread machine makes loaf style bread, whereas the machine I used to have, made a vertical loaf. The one I have now actually makes the bread look like a loaf. I've never tried the dough cycle to be able to bake the bread in the oven. I would imagine it might not turn out the same. The only recipes I have usually call for eggs and or milk. I love to make bread with tons of grains and nuts and the kitchen sink, but when we just want to have a regular sandwich bread I make Italian Bread. This makes a 2 pound loaf.

1 cup milk
1 egg
1/4 cup water
4 teaspoons butter
4 cups bread flour
3/4 teaspoon salt
1 1/4 teaspoons bread machine yeast (or active dry yeast)
For the bread machine recipe, all the wet ingredients go in first, then all the dry stuff. Turn on machine and let it do its work! I don't know if this will help you. Bread machines are great, everyone should have one!

I thought doubling the recipe, but I think the problem is somewhere in the rising. After it goes through the dough cycle you take it out and put in the loaf pan and let rise for an hour. Then bake. It seems to rise nicely-above the top of the pan, but then when it is cooking shrinks back down to half the pan. I also thought of adding vital wheat gluten but I didn't know how much to add.

Maybe what you need to do is to double the recipe?
Like, make 2 batches of dough and twist them together before you put them in the pans? Maybe that would work. Maybe use a big round bowl to bake it in? Hmmmm I am going to think on this one.emoticon

POTRIDGE: Do you have a breadmaker recipe for a good sandwich bread? Preferably vegan if possible, please. I have been making a nice bread from Fatfreevegan.com where you use the dough cycle and then bake it in a regular loaf pan so it is like sandwich bread, but it still seems to come out very small! It has whole wheat flour, oats, and wheat germ which comes out as a very yummy tasting bread but just not a good size for sandwiches. I would appreciate it GREATLY!! Thanks, Leen

Yesterday I made a big pot of veggie stew with pinto, kidney, and black eyed peas. I put tomato sauce and peanut butter to thicken it up. (It sounds weird, but its so yummy. Try it!) I ate it with some rice. I'll probably have the same thing tonight since I'm crazy busy with school right now.

Will, eggplant is my favorite food ever. Cook me some!

I made this www.recipezaar.com/192295 . I had to add 1/2 a can of tomato paste to thicken it up but it tasted better than it looked. LOL We also had a salad with tons of broccoli and red bell pepper.

We had leftover 3 bean chili from last night that i had made up in a pinch. I added some sauteed veggie sausage and half a bag of spinach tonight, and a half a bottle of light beer since it seemed to thick. I figured beer cooked down a little in chili would be good. I added some more spices, and cooked up some of Trader Joes flax seed wheat pasta. My chili which would have only lasted 2 more lunches now stretched through dinner, and two more lunches tomorrow!

It's like a Cincinnati chili mac minus the meet add yum!

I do a similar trick; I cook a huge bunch of dhal, freeze it in two serving (ish) size containers and then when I want something easy, I defrost one container and add veges to it like chuncks of white onion and carrot and then nuke it together in a bowl in the microwave. Lazy or what!

I made a big pot of veggie soup on Sunday and I am still eating it.

Tonight I added peas to the soup and then ate it with two tortillas to help balance it out. MMmmMmmm

I was on the run, grabbed the stuff, heated it up and out the door I ran eating at stop lights! I am glad i had the soup made ahead of time.

We had bulgur, leeks and swiss chard-a recipe I got from Vegetarian Times. I added a couple smart links for extra protein. Then melted chocolate chips on fruit-DH had banana, I had mango.

Everyone has some great meals. Here is my dinner:

Eggplant sauteed with onions in a little olive oil, some steamed brocoli, brown rice, garden salad, and some slices of watermelon.

I find the scandal-monger is my good teacher. If we do not become angry at gossip, We have no need for powerful endurance and compassion. To be mature in Zen is to be
mature in expression,
And full-moon brilliance of dhyana and prajna
Does not stagnate in emptiness. Not only can I take hold of complete
enlightenment by myself, But all Buddha-bodies, like sands of the Ganges, Can become awakened in exactly the the some way

Whole wheat wrap with baked tofu, peanut sauce, lettuce, tomato, possibly onion (if I have any!!)

Baked zucchini and yellow squash with a little evoo and seasoned with salt, ground peppercorns, garlic salt, cumin, curry, Tony's seasoning. YUM!
