I get a lot of wonderful recipes from this site (V.T.)but I usually search and use the recipes that have been rated with 4 stars. Thanks Coach Nicole for the recipe - I barbecue with my family every Friday night and it is so great to get a new grilling recipe. P.S. everyone - don't forget to rate the recipe on the V.T. site if you use it.
I marinated it for about an hour, grilled it outside on foil (and actually, it was easier to cook/turn without the skewers than with them), and I didn't have any ginger, yet the peanut sauce turned out great! To finish off the meal, I plated brown rice, steamed broccoli and shelled edamame, some grilled yellow and green bell peppers, the tofu and the peanut sauce. It was delicious and filling!
Probably what I'm most excited about is that the peanut sauce (one of my all-time favorite foods) was good and easy. I've been searching for a healthy, simple recipe like this for a long time, and I think I've finally found it!
