My fruit salads usually consist of whatever fruit looks good when I go to the store. Usually bananas, strawberries, grapes and blueberries. I also like to buy a pineapple when I see a good deal on them and also peaches and kiwi. Melon is good, but it's hard to find any with any taste to them. I don't put dressing on my fruit salads.
I fix a big green salad almost every day (to eat while my dinner cooks). Romaine, some onion and grape tomatoes for sure. I also add whatever other veggies I have in the fridge (cucumber, green pepper, carrot). I like to add a 1/2 serving of Craisins on the top, since I dress the salad with lite ranch dressing most of the time--I love the combination of savory dressing and sweet/tart fruit.
Another vegetarian salad is a tropical cole slaw: Take packaged angel hair cole slaw mix and add some crushed pineapple, a little coconut when I have some and then mix with cole slaw dressing (with a little pineapple juice added--but not enough to make it runny).
It's not fruit or veggie, but one of my favorite salads is chicken salad with grapes (or pineapple chunks) and pecans (maybe honey roasted nuts). Yum!
