My recipe for the week is a Corn and Black Bean Chowder from Cocktail Mom:

We followed this except for the following modifications:
- took out the chili powder & cayenne
- doubled the onion
- halved cheese

Each serving (1.5 cups) is 319 calories, 8 fat, 54 carbs (11 fiber), and 20 protein.

It was DELICIOUS. Much better than the chowder we tried a few weeks go. This one is a keeper!

Full points for the week, so my running total is 45.

I got my cardio and self love, I have one more day of strength training (legs), my Heart healthy recipe is as follows, I made it up today as I was cooking...

2 chicken breast cooked and shredded, I used left over chicken
4 cups of cooked brown rice
1 bag of broccoli
1 pint of mushrooms
1 small onion
thyme, poultry seasoning, salt and pepper to taste

I put the rice on to cook and put the broccoli in with it cooking them both at the same time, taking it off the heat short of being done, added in the rest of the ingredients. then I shredded about 2 oz of sharp hard cheddar cheese on top and let it melt.

I did everything on top of the stove, but you could throw it all in the crock pot and let it cook, and just add the cheese at the end of the cooking time.
I'd rate this about a 4, the boys loved it... I'm not a huge rice eater...


so that gives me 10 more points. 40 total , I think I'll add the rest tomorrow

If I do my ST tomorrow as planned, along with my DDPYoga workout, I will get full points this week. I've gone out of my way to give kind, sincere compliments to friends, family, and strangers this week. If I didn't mean it, I didn't say it! All that's left is my heart healthy recipe:

Tonight we are having Texas Layered Salsa Chicken Bake - which is basically a casserole dish served over brown rice. It's a modified version of an old Kraft Foods Southwest Chicken Bake recipe. I've lowered the sodium and fat in it making it more heart healthy. The main way I lowered the sodium is using a low sodium homemade taco/fajita seasoning recipe I got right here on Spark! The only thing I do different to the seasoning recipe is eliminate the salt substitute all together as it interacts with one of my meds. You can also make it as spicy or as mild as you wish. Use it on tacos, casseroles, fajitas, anything you want to give a little southwest or Tex-Mex flavor to. I'm using boneless, skinless chicken thighs because they are moister and juicier, but this can be made with chicken breasts just as easily. The layer of drained black beans give it a fiber boost as well.

I give this meal a 4 out of 5 stars rating. It's very good, but not "take the top of your head off" good. I kind of classify it in the comfort food range. Here's the recipe link: www.sparkpeople.com/myspark/recipe_d

We're trying a new corn chowder tonight. The black bean and corn chowder we made two weeks ago turned out to be more like chili, as I said on here, and Jason has been itching to have a real (healthy) corn chowder, so I think we'll be doing that on Thursday. I've gotten in my cardio and have been real good to myself with regards to positive thinking, so I know I'll get those points for the week. I need to get my butt in gear and do some Strength Training now!

I'm behind on my posting again this week, sheesh... this is for last week I got in my exercise and positive thinking in and it was great, and my new recipe is something I did with chicken again... ( I do chicken a lot )

Best Chicken Salad Ever

I LOVE this chicken salad.
Note: You can substitute the wine with chicken broth (I do that) and you dont have to use the broccoli or tomatoes, but I love it!
2 whole (4 split) chicken breasts, bone-in, skin-on
Good olive oil
Kosher salt and freshly ground black pepper
2 cups broccoli florets
1 1/2 cups good mayonnaise/ Greek Yogurt
2 tablespoons dry white wine/ chicken broth
1/4 cup Dijon mustard
3 tablespoons whole-grain mustard
2 tablespoons minced fresh tarragon leaves/ Dried (rubbed)
1 cup cherry or grape tomatoes, halved
Directions

Preheat the oven to 350 degrees F.
Place the chicken breasts on a sheet pan and rub the skin with olive oil. Sprinkle liberally with salt and pepper. Roast for 35 to 40 minutes, until the chicken is just cooked. Set aside until cool enough to handle. Remove the meat from the bones, discard the skin, and dice the chicken in large bite-size pieces.
Meanwhile, add the broccoli florets to a large pot of salted boiling water. Cook for 1 minute, until crisp tender, drain, and place into a bowl of ice water until cool. This will stop the cooking and set the bright green color.
For the dressing, whisk together the mayonnaise, wine, mustards, 1 tablespoon salt (I use let) and 1/2 teaspoon pepper. Add enough sauce to the warm chicken to moisten well. Add the tarragon, broccoli, and tomatoes and mix gently to combine. Refrigerate for a few hours to allow the flavors to blend. Serve at room temperature.

I'm not sure where I got this recipe and I did make changes to it, I've made it a lot.

so I think if I am reading how to do this right , that brings my total points up to 30, but honestly I"m not sure...

Wow! Your leadership team got busy and dropped the ball...sorry about that! Week 3 started on Friday. Hope everyone Here's what we are doing now:

Week 3 February 15-21, Self Love

Let's give ourselves a great big hug and knock out that negative self talk. On a daily basis, give yourself a positive affirmation or replace negative thoughts with positive ones, give sincere positive compliments to others and accept compliments from others graciously. Make your heart smile and by complimenting yourself and others. This will earn you 5 points. PLUS you can earn an additional 10 points by trying another new recipe and getting in your 30 minutes of cardio 3x a week for a total of 15 points this week.

So love yourself and others with sincere, generous compliments this week, post a recipe, and get in that cardio!

this has been such a crazy week, that I didn't get in here to post my recipe and workouts, for this past week... sorry guys... I'm gonna post them now, but I totally understand if they can't count now... I did 5 days of cardio, and my recipe is one I made up and is as follows...

Put 4 or 5 chicken breast in the crock pot... add onion cup up, celery, carrots, thyme, sage, sea salt (pinch), pepper and poultry seasoning. and water, leave cooking all day while your gone... when you get home, pull out the meat and shred, measure out half a cup to a cup.. serve over a lovely fresh bed of mixed salad and a slice of tomato. I use my dressing on the side.
I strain the stock and save for later time.

so anyway, if it counts that would be 10 for the week and 15 running total...

Ok, I'm here to post my recipe for this week. You'll notice again it's from Hungry Healthy Happy, but I really love her. I find her so inspiring. Anywho, the recipe I made was for homemade whole wheat tortillas. The first thing that drew me to this recipe was how easy it was and that I had all the ingredients on hand. I love that. She's located in England and uses the metric system, so I feel like the measurements might be a little off...or maybe I didn't do the conversion right. Either way the first time I made these they kinda fell apart a little bit (they were crumbly) and the second time I made them they were more like tortillas. Part of the crumbly, tougher texture is due to the fact that it's wheat flour. And there are different kinds of wheat flour so that might make a difference to. Anyway, I give this 3 out of 4 stars. They were easy to make.

We made this for the first time tonight and it was delicious! A bit too spicy for me so I'll have to have Jason cut back a little on whatever made it spicy, but it would be considered mild for most people (I can't stand even the tiniest bit of spice!). The calories on it are fabulous too - for a serving (1.5 cups) it's 384 calories with 6.4g fat, 61.9g carbs (25.2g fiber - that's almost a whole day's amount!!), and 21.9g protein. While the 384 calories might seem high, remember that's for 1.5 cups of soup, which is much more than I can eat in one serving!!

4 of 5 stars - would be 5 of 5 if not for the tiny bit of spice!

5 points - total 10 points so far

Note: the calories do not include the Greek yogurt, which is meant to be added on top. Also, I didn't add jalepeno or lime or yogurt when i ate my serving. I ate later than the rest of the family and didn't realize I was supposed to. I'll bet this would be much better with the toppings, and would be a 5 of 5 recipe then. Tomorrow when I have my leftovers I'll do this!

ok so I got kind of confused as to when we were suppose to have the recipe posted this is mine for the 1st week.

Shepard Salad

Dice one cucumber and two plum tomatoes. and thinly slice some onion.
Mix the juice of one lemon with 2 tablespoons of honey, and 2 Tablespoons olive oil
Pour over the veggies and toss to coat.
Salt and Pepper to taste.

I made it with out the olive oil and it was good but I think the oil adds so much.

Here's 5 of my points for week 2. Crockpot Salsa Chicken is one of the most popular and easy of the Spark recipes. This is my version, served as a Mexican Salad. It is low in calories, has no added salt except for what is in the salsa, as you drain and rinse the black beans (the recipe I submitted didn't list to drain and rinse the beans so the sodium count is lower than the recipe indicates) and has little fat. It is very filling. You can choose to add sour cream, or eat it as tacos on flour or corn tortillas, but you lose a lot of the heart healthy benefits when you do. Hope some of you will try it; it's really flavorful! I rate it a 4.5 out of 5 stars. I would go 5 stars if I could figure out how to make meat totally fat free!

Sherry, I do between 6 and 7 hours of cardio every week - I know exactly how you feel! I always feel bad when challenges ask me to get in 8 glasses of water, when I normally drink double that on a daily basis too. But challenges are meant for so many people - some of the challenges will be hard for some people, and others won't be - that doesn't mean you shouldn't participate. Consider it a free 5-point gift for this week! And be pleased knowing this is a habit you have already established. :)

Sherry, do NOT feel that way at all...this challenge is about building healthier habits and trust me, just because this week is something you already do is not a reason not to participate. Remember to try a new heart healthy recipe and post about it, continue your exercise, and then build on to the next step starting next week! I already do cardio three times a week myself, as well as the 2X a week strength training...but this keeps us on track and obligated to stay that way!

Who is ready for week 2 of the challenge? It starts today!

Week 2 February 8-14, Heart of Love

We only get one heart, so lets show it how much we care. Do 30 minutes of cardio 3x a week for the chance to earn 5 points PLUS you can earn an additional 5 points for posting a NEW heart healthy recipe. The time will tick by before you know it as you feel the burn and get that heat pumping! Completing both tasks will earn you a total of 10 points for week two.

My dad is a coleslaw loving man. I just read this recipe to him and he wants me to make up a batch for him to try. He usually prefers a sweeter slaw, but I promised him if it wasn't to his liking we could add a little splenda to it! Thanks for sharing!

My heart healthy recipe was Mexican Coleslaw! I love making cole slaw a variety of ways to add to fish tacos or burgers, and this was pretty darn good. I give it a solid 3 out of 4 stars and will definitely be trying this again. I love that she used greek yogurt instead of mayo. Here's the recipe:

I *adore* hummus!!!

Here's my 5 points for the week! Tonight we made a black bean, corn and poblano chowder. The recipe is here: http://danielsfastcookbook.com/rec6.html

We followed this pretty closely (though we added a tiny bit less poblano, because I'm not a spice fan). It breaks down to 238 calories per cup (5.6 fat, 41.8 carbs, 10.4 fiber, 11.5 protein). Very high fiber because of all the beans, and meatless for people who do meatless days.

As for taste - well, we expected it to be more like a chowder, but it was more like a chili. This would have been really good, except we actually made chili two days ago, so it sort of felt like overkill in our house. But we'll try it again another night when we haven't just had chili for several meals (chili gets eaten for 2-3 meals in a row in our house!). I'd say it's a 3 of 5 stars sort of recipe, especially since it advertises itself as a chowder. But it was new to us, and heart healthy, and that was the point right? Trying new heart healthy things!

My first 5 points... I love hummus, and make several different kinds, but I love this one with the lemony flavor...

Hummus Dip
Ingredients
2 (15-ounce) cans chickpeas, drained and rinsed (save the liquid, in case you need to add some)
1/2 cup extra-virgin olive oil or more as needed, plus more for garnish
1/2 lemon, juiced
2 tablespoons roughly chopped fresh parsley leaves, plus more for garnish
2 cloves garlic, peeled
1 1/2 teaspoon salt
1/4 cup tahini
1/2 to 1 teaspoon ground cumin
12 to 15 grinds of black pepper
1/4 cup water
Paprika, for garnish

Directions

In a blender combine all the ingredients except the parsley and paprika to be used for garnish. Blend on low speed until smooth. You'll have to stop the blender often to push down the ingredients. If the mixture is too dry and you're having trouble blending it, add a few more tablespoons of olive oil (or the saved liquid from the chick peas) to help things along.

Scrape the hummus onto a plate. Sprinkle the paprika over the top, drizzle lightly with olive oil, scatter some parsley on top, and serve. You can make the hummus up to a couple of hours before you serve it. Cover the top with plastic wrap and leave it at room temperature.

dip with veggies, or if you eat crackers or pita chips...

I forgot to say I'd rate this right up there at about a 4 or 5 , I did change things on this so it is my own recipe, I adjust things to suite myself all the time...

The lavender adds a flavor that is really good and really hard to describe. It is delicious! You can use lavendar in lots of foods like fish, chicken, pork, coffee, tea, deserts, pancakes, coffee, potatoes. Please try it like I did in something simple like a biscuit so that you can appreciate the flavor and of course try the spice mix. It helps if you have a spice grinder also.
You should be able to purchase culinary lavender in the spice section of most stores, if not; you can purchase it from this website: http://www.imaginelavender.com/
You can also find hundreds of recipes by typing lavender in the search option on: www.food.com

Here's my 5 points for the week! When I read BlueBonnet's oatmeal recipe, it inspired me to find other heart-healthy, but outside the norm, breakfast ideas. These cookies are VERY easy to make. I loved the idea of peanut butter and banana with dried cranberries in a cookie you could eat for breakfast. Of course, you can leave out the cranberries if you don't care for them. The recipe called for chunky peanut butter, but I prefer smooth, so that is what I used. The only ingredient I don't normally have on hand was dry milk powder. I DID have some left though, from some special Christmas baking I tried this year. I like the idea that they will keep for 3 days in an airtight container or you can freeze them for several months. This is great for those who like to bake large batches ahead of time.

Now, on to the tasting. These went well with my morning coffee; truly...but if you are expecting a sweet cookie you might want to add some splenda or other sugar substitute you can bake with. I am going to make these again later this week with the splenda. They were nice and chewy and an hour later I am still full and not feeling deprived. I would rate this one 4 stars out of 5, simply because of the addition I think it needs.

This recipe is for the oatmeal lovers out there. I hope to gain some converts. I came up with the spice mixture after I got tired of taking everything out each time I made oatmeal. The link to the spice mix is included after recipe. Try the spice mix, you will love it..


1 cup water
1/2 cup rolled oats or old fashioned oats
1 tbsp raisins
1 tbsp butter (or heart healthy spread of choice)
1 tbsp evaporated milk (or milk of choice)
2 tsp Oatmeal Brown Sugar Spice Mix

Place water and raisins in small pan. Heat to boiling. Add oats and cook according to package directions or desired doneness. When oats are done, add in butter, milk and spice mix. Mix thoroughly. Enjoy! Add more or less spice mix to taste.

I'm sorry, I replied to the the other day, but apparently it didn't go through. I think that as long as a person shows at least a half-HEARTED attempt to participate and has posted some recipes and general comments and points, we will include their name in the drawing. Posting something like "I'm in!" and then never posting anything else will NOT count. However much participation a person puts into the challenge benefits THEM and them alone. This is an individual challenge, not a team challenge, so there is no one who loses out by not doing their best except the individual.

If you are new to exercise and/or quite overweight, it can be pretty daunting at first, especially if your balance and endurance are not great. We don't want this to stop you from joining in with us for the challenge. Some of you may have permanent or temporary back, leg, or mobility problems. I'm temporarily in an orthopedic boot.

Each week will focus on a different goal and completing that goal will earn you points. Let's give ourselves a great big hug and knock out that negative self talk. On a daily basis, give yourself a positive affirmation or replace negative thoughts with positive ones, give sincere positive compliments to others and accept compliments from others graciously. Make your heart smile and by completing yourself and others. PLUS you can earn an additional 10 points by trying another new recipe and getting in your 30 minutes of cardio 3x a week.

Week 4 February 22-29, Labor of Love
Your heart is a muscle so let's strengthen it. Do Strength Training 2x week working at least two body parts like upper and lower or arms and legs or back and legs, etc. Your heart will thank you for pumping iron. PLUS complete Week 1, 2, and 3 for a total of 20 points.

So let's recap:
Week 1 - Try a heart healthy recipe, post it or a link to it on the challenge thread, and rate it. Earn 5 points

Week 2 - Do everything you did in Week 1 PLUS do 30 minutes of cardio 3x a week. Earn 10 points

Week 3 - Do everything from Week 1 and 2, PLUS do your self-love affirmations and compliments. Earn 15 points

Week 4 - Do everything from Week 1, 2, and 3, PLUS get your strength training in 2x a week. Earn 20 points

1) Everyone who participates will have the chance to win a prize. There will be 2 winners chosen randomly using random.org.
2) Points are due on the Friday of the 2nd week, but can be turned in sooner if you complete your goals before then.
3) To earn the points for heart healthy recipes, you must chose a new recipe each week. You must post that recipe, or a link to it, on the challenge thread, and you must rate it i.e. 2 thumbs up, 3 out of 4 stars, etc.
4) Additional points will not be rewarded for posting extra recipes, doing, extra cardio, etc. Maximum of 50 points can be earned.
