I love grilled cheese but I have learned to like a much lower fat version.
2 slice wheat bread 60 cal each
1 piece of kraft cheese
no butter on the bread
spray the pan with Olive oil Pam
not the same but certainly a nice substitute

I love cold pasta salads...rigatoni w/cukes, peppers, tomatoes, cheese, and light italian type dressing...can make a big pot of it and eat for days.

I'm in the same boat as you. I'm so proud of myself for the last few nights we haven't dined out and I've been fixing dinner (or had it fixed for us). I don't have plans for tonight's dinner though! Last night was asian flounder packets (basically flounder with soy sauce, rice vinegar, ginger, & green onion cooked in foil); Sunday night was bible study group/dinner (lasagna); Sunday (and monday) lunches was caribbean chicken-a favorite of ours recipes.sparkpeople.com/recipe-detai

Thanks for the tips in the pb dept...

Blooregard and I went out to eat last night..... Fancied the On the Border restaurant... well, I always divide my plate in half at that restaurant BEFORE I dig in... .because the plate is the length from my elbow to fingertips! no lie!!!! well, uh,... ok... WHO CARES IF I DO THAT... cuz I picked such a whopper of a meal... who knew/? Beef Burritto!! My gosh! The calories -- the fat grams!! Geesh!!! Chicken fajitas are going to have to be my new fave! Live and learn!

Crochet and Cruz you still need to be careful with natural peanut butter because some of them still have added sugar...including much to my surprise, Smart Balance with the added Omega 3!!!

I buy a product called Power PB I heard about on the Eating Clean team...its pretty expensive, $7.99 for 16 oz but it is yummy good and only has Roasted Peanuts, Egg Whites, Flax Seeds Wheatgerm, Honey, Flax Seed Oil, Salt!!!

my poptarts this morning had ONE SERVING of WHOLE GRAIN added right in the mix! heee hee... hey, mini steps in my neck of the woods lately! bear with me!

Here's another one for you!!!

I threw together a couple clean fish tacos last night!!! I used a split whole wheat pita for the shell, covered them with low fat vegetarian refried beans (warmed in the oven while I grilled the fish), grilled turbot, lettuce, greek yogurt, salsa and shredded low fat cheese!!!

Super Yummy, super easy and super healthy!!!

Let me know how you like it Cruz!!!

Do any of you eat quinoa??? I just started eating it and it is a great addition to the grains I use!!!

I put together a quick and simple salad combination for lunch today!!!

4 oz cooked chicken, diced
2 oz fresh pineapple, diced
1 Tbsp pineapple juice
1/2 cup cooked quinoa (leftover from last nights dinner)
Crushed red pepper flakes to taste
Salt and Pepper to taste
3-5 cups spinach
1 tsp balsamic vinegar
1 tsp "good" olive oil

Mix all ingredients except spinach, oil and vinegar!!! Toss spinach with the oil and vinegar and top with quinoa mixture!!!

350 calories
34 grams carbs
34 grams protein
9 grams fat
5 grams fiber

BK is a fine choice....rarely! I had a hamburger from there on Friday, it was delicious.....won't have one again for a good long time I'm sure.
Two nights ago, we had broiled swordfish with fresh green beans...I took leftovers along with some Tuscan Risotto for lunch yesterday. Yummy.
Tonight is leftover chinese-shrimp lo mein....trying to pare down what's in the house before I head to Germany and hubby survives on takeout pizza and beer while I'm gone....you might laugh but it's very close to the total truth!
Healthier choices take planning but you can do it Ms Crochet!

ok... madness.... driving festarama for the mom taxi within me -last night...so, yup you might have already guessed it.. PIZZA PIZZA! geesh!

Good Morning Ladies!!!

Thanks Tika!!! Cooking is my passion!!! I would love to cook with my honey but he doesn't cook...we do watch the food network together and he love Chef Gordon Ramsey from Hell's Kitchen!!! LOL!!!

Last night I treated myself to Orange Scallops with Sugar Snap peas, Broccoli and Red Onions over Whole Wheat Couscous!!! It was a little high on the calories...just about 450 but it was a huge amount of food...I used 8 oz of scallops so I probably could have used more veggies and made it a meal and a snack!!! Oh well, I ran 3 miles this morning!!! LOL!!!

Jackie, your meals always sound good. Heck, they ALL sound good!
Last night was one of hubby's favorites. Walnut Crusted Chicken without the walnuts, lol. Basically, it's chicken breasts pounded flat, rolled up with Boursin Light (HE BOUGHT REGULAR LAST NIGHT, ARGH, BIG DIFFERENCE IN CALORIES) cheese, and green onions (I sub minced onion as we are not huge fans of big onion taste) in the middle....rolled in flour, eggwhite, then breadcrumbs, drizzled with a little bit of olive oil and baked for about 20 minutes at 400 degrees. We had it with frozen baby peas and it was quite yummy, as always.
Tonight is leftovers/fend for yourself....not sure about tomorrow. Saturday we're going to dinner at friends of ours...us wives are going to cook together, she doesn't do a lot of cooking so I'm teaching her some basics. We'll do pork tenderloin with roasted potatoes/peppers/mushtrooms/onion...lookin

Thanks Bloo...I really love to cook and eat!!! I have found that if I cook healthy meals I can eat more!!! LOL!!!

Tzatziki (pronounced ta-zee-kee) is a yogurt based cucumber dressing that is served in Middle Eastern cuisine!!! It's super simple to make and goes great with grilled chicken, beef or fish or as a side dish!!!

Logdiva...it is sooo hard to be such a good cook huh? I bet your lasagna was amazing! Have you ever used those non-boil noodles...they are so good and easy!
My sister in law is a good cook....I think that her scalloped potatoes are one of the best things she makes!
I work at a country club and our chef is new and amazing! He made another soup (which I got some coaching from him on how to make it) Cream of Curried chicken...OMG! It was yummy too. Tonight I am going to try to make it (and make it ALITTLE healthier!!)...I will check in tomorrow and let you all know if I got it right or if I messed it up!

Last night was middle eastern...grilled marinated chicken breast in a whole wheat pita topped with chipotle hummus and tzatziki dressing with steam broccoli, zucchini, cauliflower and sugar snap peas on the side!!!

It was sooo good I had a repeat for lunch today!!!

Tonight will be roast turkey breast with multigrain pilaf and steamed broccoli!!!

On the food front: We had a dangerous lasagna last night. Hubby requested a meaty-cheesy-hearty hot meal....and he got it. He loved it! Unfortunately so did I and I could not help myself! DANG, I am a good cook.
ANYWAY....we have leftovers for at least a couple days and I am going to ration them.

Logdiva...your dinner sounds so good!

I do like Panera Bread. I like their Cream of Chicken and wild rice. Very good!

Last night my sister-in-law made her scalloped potatoes (oh so good)with red skinned potatoes, ham peas and a nice light creamy sauce. It is the meal that I adore so she always makes it with her left over ham when she knows I am coming over. It takes everything in me NOT to go up for seconds!

Today at work I had a super small cup of this amazing soup that the chef made...it had white beans, a small amount of pancetta and some kind of sausage that was out of this world...he is new here and I begged him to make something alittle more healthy. His response...oh, it's not that bad! Ha!

I like ground turkey sloppy joes...I usually have mine on whole grain english muffins.

Last night was tuna sammiches on our bread of choice and a sprinkling of sour cream and onion chips.
Tonight was an old faithful with a kick: broiled boneless pork chops with fresh green beans and the kick was a small loaf of rosemary and olive oil baguette with a sprinkling of mozzarella and asiago cheese on it sliced and popped under the broiler just til cheese was melted and a tiny bit browned around the edges. YUMMMY!
I love sloppy joes! Hubby hates them, so I fix em when he's not home, heehee. Altho the breakfast for dinner sounds good.
Bloo, I've not had much from Panera but their Black Bean soup is good!

Last night was an easy one... 2 Kashi Go Lean Blueberry Waffles, Scrambled Egg Beaters and 1/2 a banana!!! Kenny on the other hand had Sloppy Joe's, a pork chop and fries!!! WE are always a two meal family!!! I can't wait for him to come over the the healthy side!!! LOL!!!

Thusday is usually the night I throw together all the left over veggies into a Stir Fry with Tofu!!!

Jackie...went out to the bookstore last night and Eating clean has a neat magazine and on the cover was pizza! Was that the one you made? It looked yummy!!
Logdiva...you dinner sounds really good! Ok, Crocket and I had chicken, red skinned potatoes, she had steamed veggies (she is so good!), I had corn and some corn bread on the side. So yummy!
Oh, and honorable mention to the gelato man!

Hubby and I jointly prepared dinner tonight. He dressed up some sirloin tips and we broiled them along with asparagus w/ a drizzle of olive oil and some salt free garlic and spice mix. So good!

Last night I put together a great and clean eating friendly Pizza (they can be folded into a taco shape too for easier eating)

1 whole wheat pita split in half
1/4 cup marinara sauce
10 slices meatless pepperoni
1/4 cup shredded Low fat cheese
2 oz cooked grilled chicken
10-20 thin slices of red onion
4 thinly sliced mushrooms
1 tsp olive oil
Salt and Pepper to taste

Split the ingredient between the two halves of pita and bake in a 375 degree oven for 20 minutes or until brown and crispy

367 calories
8 grams fat
41 grams carbs
36 grams protein
6 grams fiber

Super filling and super good!!!

Logdiva...I think that Maple spread is alot like what my Mom used to call spun honey. I used to love that stuff. I wonder if they make it anymore. Your maple spread sounds yummy!!
Last night I was home with the boys so I made a salad and my pasta concoction....break an egg into hot cooked noodles (I use eggbeaters for me)and stir it while I add some parm cheese...peas and then some short cut perduce chicken. Tastes like Chicken alfredo...almost and it is very easy and quick! Well, the boys love it so I tend to make it quite often.

What did everyone else have last night??
This weekend for easter I have to make several deserts...coconut cake, a pecan pie, peanut butter fudge and some cookies. I am going to allow myself a piece of the cake...the rest I make for my family.

Good Afternoon Ladies!!!

Last night I made an Italian stew with onions, mushrooms, zucchini, grape tomatoes, spinach, chicken breast, garbanzo beans and marinara sauce!!! It was soooo hearty and flavorful and fit perfectly into my Eating Clean plan!!!

My sister turned me on to the Maple Grove Honey Maple Spread. It's quite rich....a thick spread...it's opaque, not clear like honey...
High in cals-160 cals per two tbsp serving size. I only had a dab-maybe a half a TBSP...just enough to get the sweetness married up with the strawberries. Your dinner last night sounded yummy, Bloo....what are you having tonight?

Yummy Logdiva! What is that Maple Grove Honey Maple stuff? Sounds sooo good! Is it like a spun honey??

Ok, last night was fantastic lemon pepper chicken on the smoker grill (at sister in laws), green beans and some super yummy rice....and because I had a super sweet tooth...a small handful of M & M's!

Tonight going over to Dad's where my Stepmommy is an amazing cook. Can't wait!

Tonight on the menu is homemade sauce and pasta. I will have the whole grain noodles with my sauce.

I have to run before I eat or I will have a hard time running after having sauce!!

Last night was homemade Chicken catchatori that I got out of a healthy cookbook. I was worried that my hubby wouldn't like it (because it was healthy) and gosh darn it he did. It was GOOD! Just finished the leftovers for lunch today.

Hubby hates sloppy joes/manwiches....SO, I sometimes have them when he's away.
We had baked spaghetti and fresh green beans...which I could not taste. I am told it was tasty.
ARGH!
Moderation? You know, generally I'm right on track with that, but I have my days....still not quite ready to go tracking-free.

Isn't it what we have all heard? Moderation! I suppose that is the key right? I am still struggling to learn moderation...but I am getting there. Cruz sounds like you are there! Good for you!

Last night was anything but gourmet! We had open manwhich sandwiches made with ground turkey instead of beef. I had mine on a light multigrain english muffin and the rest of the family had hamburger rolls. It was actually really good!

yea, I stopped logging my food in awhile back--I must have an eclectic taste because so much of the stuff I eat was not listed (and there are a lot of brands listed I've never heard of!). Gosh, half the time when I get those emails of the food comparisons, I haven't heard of the brands!

I just try to control my portion sizes and when I eat out, I try to order healthy.

Ok, today at work our new chef basically made the entire menu and we were all able to sample from all the dishes which filled us all up with plenty of extra. Drizzling of this and a reduction of that. It was torture but oh so good!

Such a nice idea but how the heck do you log it? I tried but darn I have no idea how much I got right and what I got wrong!

i hate pork chops... however... hubby loves them......

thought I'd share a really simple and easy recipe I made this weekend with y'all!

Boil a whole bag of egg noodles, drain and rinse with cold water. In a pot add some mixed vegetables (a bag of the frozen kind), a can of cream of chicken soup (low sodium is better), and some leftover chicken or turkey (or canned chicken!). Once that's boiling add the egg noodles, stir, and serve!

Hello my fellow foodies....I have to share with you all what my dh and I ate after we went to see the Phantom of the Opera on Wednesday.

We found this little hole in the wall Italian place on restaurant row. They had homemade bread, pasta and marinara sauce! The pasta positively melted in your mouth...ok, sorry for those of you that are trying to avoid pasta,probably TMI right? I was SO happy that I only had a Luna bar for lunch and saved my calories for the meal. It was such a treat! The best part? Only $26 a person for Appetizer, entree and dessert of your choice.

Last night I made a healthy pot roast but for some reason my crock pot cooked it uneven...grr!

Sounds delicious Anne...what a dear Hubby you have...grilling outdoors in the chilly cold.
My lunch yesterday was notable: Leftover dinner-slice of homemade healthy meatloaf, roasted brussels sprouts, and a dollop of turnip casserole.
Dinner last night was lazy: Beans and dogs, lol...hubby had red hotdogs (which I love but never eat anymore) and I had FF Ballparks. I can eat two of those for the price of one red hotdog so that's why I stick with em. They don't taste half bad either.
Anyone try Veggie Brats? Someone here, I think it was Tricotine, turned me on to them and I love the zesty italian ones...yummy!
ANYWAY...I'm having a tough day, got the munchies terrible. Where's my cup of hot tea?

I'm such a foodie, if I weren't I'd be a beanpole.
We had chicken breasts w/garlic mustard and swiss cheese on top, turnip casserole (hubby tried and didn't like), and fresh grean beans last night.
Dessert was before dinner, and I don't want to discuss it.

Well I didn't have any special Valentine's dinner but for lunch I had veggie ravioli and 2 slices of whole wheat bread...Yikes. As I added this food to my nutrition tracker I was actually surprised it wasn't as bad as I thought. Plus I ran 2.8 miles yesterday on the treadmill last night..so I guess the carbs helped.
Tonight it's PF Chang's...wish me luck!

All that is not given is lost.

I bet some of you have some great valentines’ day dinners planned.

I’m surprising my partner (who moved 2,000 miles this year from Omaha to be near me) with Omaha Filets wrapped in bacon, steak fries, and cauliflower. For dessert I’m making a creative parfait. I am folding 4 tablespoons of fat free cool whip into a sugar free/fat free jello pudding cup (chocolate) to make it lighter. I’m then layering this in a dish, alternating between pudding, layers of just the cool whip, and finishing it with a dusting of cocoa. I may mix some cherries (frozen) or other fruit into the bottom layer of pudding as well.

Lunch today was leftover blueberry “sour” pork chop—I took no sugar blueberry preserves and made a glaze with vinegar to give it some sour bite.

The brown rice veggie lasagna sounds yummy as well...
Tonight I fixed old faithful as hubby wasn't too hungry and we hadn't taken any meat out of the freezer: Sauteed onions, green peppers, and mushrooms over a Morningstar veggie burger....love it!
