i usually just use the collard leaf raw (trim away the thickest part of the stem), but i have seen it recommended to dip it for a minute in boiling water to soften it.

any of the salads described below would be perfect wrapped in a collard leaf (wonderful calcium source). i send a hummus collard wrap filled with hummus, pepper strips, grated carrot, onion, etc, with DH when he travels, and he loves it.

A quinoa salad with any veggies or beans you like. I make it up in a big batch and then eat it warm or cold. Basically cook the quinoa and beans separately. Mix them and add in chopped veggies. You can warm the veggies in the quinoa and bean mixture, eat them mostly raw, or pre cook them before adding. If using canned beans you can probably just add them to the quinoa when it is mostly cooked. This keeps well in the fridge. I use it when cleaning out my fridge. You can throw just about anything in it. I added dried cranberries once just to use them up.

If you have a small cooler you could bring a salad or a sandwich on pita bread. I like a mock tuna salad made w/ chickpeas. There are some spark recipes out there for this. Eggless salad is also good. If you don't have a cooler, PB&J is also a good standby.

I am very new to the vegan lifestyle (still in my first week). In July I have a convention and some continuing ed classes where I will need to take my lunch. For the classes, lunch is provided and I'm sure some kind of vegetable/fruit will be provided, but I will need to take my own main dish to eat. I will have access to a microwave for re-heating. For the convention I have to provide my own lunch with no microwave...just my lunch bag. Do you have quick/easy meals I can make for these events? Thanks!
