NOTE use only 1/4 cup breadcrumb mixture at a time if it becomes too moist it won't stick to the tofu.
NOTE I will provide a recipe for vegan parmesan after the recipe.
Note To press moisture out of tofu put quite a few kitchen towels on a counter. put the drained tofu on the towels. Cover with a few more towels. Cover with a flat object like small cutting board or dish and put about 2-3 pounds on top of it. Let rest for 25-30 minutes. While this is happening do I started the rest of the recipe.
Ingredients 1 lb super protein tofu or extra firm pressed 1 cup breadcrumbs. nutrition facts will be slightly off if you use white breadcrumbs. She made her own. 4 Tbsp vegan Parmesan. Easy to make. 2 Tbsp Italian seasoning. 1/4 tsp fine salt 1/8 tsp pepper 1/2 cup non dairy milk such as soy or almond 1 Tbsp cornstarch 1 28 oz jar marinara.
Preheat oven to 350 Line a cookie sheet with parchment paper. Can be found at walmart.
Turn tofu on its side and cut 12 even sized cutleets. Kind of vague. I tried to cut 12 slice lenght wise and mad long thin cutlets. That turned out pretty well.
Combine breadcrumbs vegan Parmesan, spices, salt,and pepper and use a mortar and pestle or food processor to grind to sand like consistenccy.
Whisk non dairy milk and cornstarch together and place in shallow bowl.
Dip each tofu cutlet into non dairy mixture briefly submerging and quickly into breadcrumb mixture.
Flip tofu over and press into breadcrumbs. Repeat until well coated.
Repeat with cutlets and place on cookie sheet with parchment
Spray with cooking spray and cook 12 minutes.
Flip respray and cook another 10 minutes.
Arrange cutlets on plate and cover with marinara. I heated up my marinara in a microwave. She doesn't.
Garnish with vegan Parmesan.
Vegan Parmesan 1 cup nutritional yeast found at whole foods and good heath food stores. 1/2 cup grinded almonds. Use spice grinder or food processor not a blender. 1 tsp salt.
Thanks IMVEGAN so much for that link today. I just happened to have everything for it today. I know it made my baked tofu parmesan a success. John the breaded vegan parmesan didn't burn at all at 350 for about 20 minutes. Perhaps I will post the recipe when I have a little more time.
