It is beyond yummy i seriously think it beats real meatloaf...so flavorful not just ugh meaty

Makes 5-6 servings
Nutrition Info per serving (5 servings): Calories 336, Fat 13g, Saturated Fat 2g, Polyunsaturated Fat 7g, Transfat 0g, Monounsaturated Fat 3g, Carbohydrates 42g, Cholesteral 111, Sodium 337mg, Dietary Fiber 11g, Sugar 9g, Protein 15g

Ingredients:
.5 cup dry lentils
1/2 cup walnuts chopped
1tsp salt
1.25 cup chopped onion
.5 cup ketchup
1tsp basil
1 cup rough cut oats (not instant)
3 eggs
2 tsp mustard
1 cup chopped red pepper

Preparation:
Preheat oven to 350 degrees
cook lentils until soft - once drained smash with a fork
beat eggs, basil, salt together
combine egg mixture and smashed lentils until well blended then add oats
add the other ingredients and mix well
Put all of that into a greased 9"x5"x3" pan or something similar and bake for 40 minutes
