I've been wanting to make stuffed portobellos for a while. I don't have a recipe but I was thinking of making them with quinoa. So I would probably cook quinoa with nuts, garlic, onion, cumin, chili powder or cayenne pepper & celery (maybe some nutritional yeast) then add it to the mushrooms halfway through roasting time with salt and pepper. After it's cooked drizzle it with extra virgin olive oil and garnish with fresh parsley and chopped tomato. Since I haven't made this before it's not tested so I'm sure it would need a few tweaks.
