Finally got around to sending this, sorry I am not good at the spark recipe site so I've just written it from my head.

Lentil pasta sauce:
1 large onion, diced fine
enough olive oil to fry onion
2 cloves of garlic, crushed (more if liked)
approx 125g (1/2 cup) tomato paste
2 teaspoons Italian herb mix (dried)
1 cup (250g) dried red lentils (they are the shelled, split ones that cook fairly quickly but they do need to be rinsed carefully in several changes of water until just about runs clear- some are very dusty)
1 can of diced tomatoes (I think they are about 400g)
water or stock (vege)
"slurp" of soy sauce
?teaspoon of sugar

Fry the onion in soy sauce until soft and just beginning to colour, add garlic and fry a minute, dont burn! Add tomato paste and fry for a minute or so. add dried herbs. Add drained lentils, cook for minute or so stirring. Add water to cover well (or weak vege stock or half water, half stock). Bring to boil then simmer until lentils are nearly cooked then add canned tomatoes, adjust seasoning (might need sugar if the tomatoes are a bit bitter). Cook until you like the taste and consistency, adding a little water or stock if becomes too this=ck and stirring to prevent sticking to bottom of pot. Add a little soy sauce, it brings out the flavour but isnt totally necessary. Long slow cooking gives the best flavour but you can make in a hurry if needed by microwaving the lentils first-plenty of hot water and watche they dont boil over!)
You can use this sauce in all sorts of things from lasagne to havin it on toast as an after school snack. freezes well
You can add any veges you like and change it around to suit your taste but it is a great staple.

This curried lentil stew is amazing! It's technically a soup, but it's very thick. Add more broth if you want a soupier version. The bonus of this recipe is that it's made in a crockpot, but you could make it on the stovetop if you don't have one. Don't be tempted to leave out any of the spices. I use Sun Brand Madras Curry Powder when I make it. recipes.prevention.com/Recipe/spiced

I make pasta sauce with red lentils. You add the washed and drained lentils to a rich napoletana-style sauce, I'll send details if you want.
