Its not really low fat coz its got olive oil and sugar in the vinegar but its really tasty and you only need a tiny bit so its not really adding many calories. Its all approximate to taste, sorry:
-good quality, fresh as you can get virgin olive oil-say 75ml -balsamic vinegar, say 150 ml -grain mustard, teaspoon -a good sized clove of garlic just well-squashed with the side of a knife -juice of about half a lemon -few herbs, I like thyme, I use dried coz it tends to keep better. -a little freshly ground pepper and sea salt to taste
Put in glass screw top jar and shake well. We have this dressing on just about all our salad except an asian style salad and my kids like it on pasta dishes or just with fresh crusty bread! Keeps almost indefinitely in the fridge. I toss it and make fresh when the garlic clove is getting tired.
