Take a pico de gallo recipe and replace the tomatoes with nectarines, and use red onion instead of white or yellow. It's pretty awesome. Make sure it has cilantro in it and plenty of lime. I prefer habanero peppers, but jalapenos work well too.

Not my recipe...can't remember where I got it but it is deee-lish:

1 (5-pound) watermelon
1 Vidalia or other sweet onion
1/4 cup red wine vinegar
Salt and pepper
1/2 cup extra-virgin olive oil
2 tablespoons chopped fresh mint
4 ounces feta cheese, crumbled --Optional or use a vegan cheese
6 whole mint sprigs
Directions
Cut the flesh from the melon and cut into bite size pieces, removing and discarding the seeds, and set aside. Peel and slice the onion into rings.

In a small bowl, combine the vinegar, salt, pepper, and whisk until salt is dissolved. Slowly whisk in the olive oil, a few drops at a time. Add in the chopped mint, taste, and adjust seasonings.

In a large bowl, combine the melon, onion, and feta. Pour the dressing over the melon mixture and toss gently until everything is coated and evenly mixed. Garnish with mint sprigs.

To serve, divide salad among individual plates and garnish with mint leaves.

This time of year, I love using grapefruit in a salad...

Per Person:
1-2 cups Mixed greens
1/4 avocado, sliced
1 Tablespoon chopped pecans
1 teaspoon olive or flax oil
1/2 segmented grapefruit*

To segment a grapefruit, peel it, then carefully remove the membrane that surrounds each segment, leaving just the juicy inner bits. They'll break up and that's okay.

I love this watermelon gazpacho in the summer (I never add the olive oil, though):

5 cups diced watermelon
2 cups diced onion
2 diced & peeled cucumbers (remove seeds)
2 small jalapeńo peppers, diced / minced
2 Tbsp. diced garlic
1 Tbsp. olive oil (optional)
3 Tbsp. minced cilantro
3 cups orange juice
2 to 3 Tbsp. lime juice
salt & pepper to taste

Put 3 cups of watermelon and 2 cups of orange juice in blender for a few seconds (I usually put about half the onions in too), then mix with rest of soup ingredients in a large bowl or pan, then chill.

H how is hard for me because it is up to you, as far as grain you don not need it, and everything in the plant world has carbs in it so you will get you carbs and they will be the kind you should have. If weight is an issue go easy on the starchy veggies like squash potato and carrots are high in sugar, also limit fruits other wise eat plenty there as well. Protein is a whole other topic but I say this, there is protein in every thing you eat that is living. so all the plants you are eating IS GIVING YOU PROTEIN. also you don't need as much as you think, that is marketing to sell more meat. Eat as much as you can raw. raw is best and blended is the most digestible form google Victoria Boutenko or raw family

Thanks Mike - now how do I get this all put together?

Increase fruits and veggies...learning the lower carb ones...

Have been cutting some grains...do you mean aim at removing all? or just cutting down?
[ I already eat gluten free for celiac daughter with severe airborne wheat allergy and for my fibromyalgia ]

Protein from ??? especially the grab quick and easy ideas are needed.

Oooops maybe these questions don;t fit on this thread??

HI the carbs you should be cutting down on are grains. The carbs in raw fruits and veggies are what your body needs

I love my fruit sooooooooo much more than veggies but have been told to cut down on my carbs...What do you think about the carbs of fruit.. especially the raw fruits without added sugars. Thanks for you input and [smiling] this thread is dangerous for a hungry gramma!!

SUPER FAST "BAKED" APPLE

Cut the core from the apple without cutting to the bottom (time is for a medium-small apple)--Granny Smith works great

Sprinkle your favorite apple-friendly spices (I used nutmeg with cinnamon) into the hole

Add maple syrup, agave nectar, sugar, brown sugar, Xylitol OR skip this step

Microwave on HI for 5 minutes

Serve in the skin with a spoon.

You are worth it!

It's peanut butter (or other nut/seed butter) filled frozen bananas. It's great for using up overripe bananas and can go right into the blender for smoothies, too.

I have been eating strawberries, a banana and handful of macadamia nuts blended up to a porridge like consistency. It's so good and filling! I have also tried it with blueberries and sometimes coconut flakes!

Grate 1 apple, add vanilla yogurt 6 or 8 oz.( I use diet or lite ) 2 T. crumbled walnuts. Mix and eat. Very simple, but tastes light dessert.

I've taken to eating fruit salad for breakfast, sliced apple, banana, and peaches (while in season), sometimes add a local farm's Pumpkin Seeds which I love and have with Tomato Juice. I love Tomato Juice for breakfast. Tomatoes are fruit too, right? ~:0) I've also begun a recent love affair with Avocado. Avocado are fruit too, I think, aren't they?

Cucumber, Pear and Apple Salad!

It is so delicious, add cucumbers with chopped Apple and Pear with some apple cider vinegar, brown sugar, and mustard!!! I know it sounds wierd but trust me on this one!

Bite-sized watermelon chunks, with shaved red onion slices, balsamic vinegar and a little extra virgin olive oil, and sea salt. YUMMY !

Orange segments with a little olive oil and viegar, sea salt and pepper.

My little Italian grandmother had a watermelon patch and a small citrus grove,on her land. She used to make these for us when we were kids. We loved them.

I slice banas into small round pieces , pour some honey on top ( or sugar whichever you prefer) and add cold milk to it ..let it sit for 15 mins and eat...quite easy to make & yummy !
( I use 50 ml milk , 1tbsp of honey or sugar , 2 medium sized bananas)

For breakfast I like to make an EASY tofu/banana meal.

I cut up extra firm tofu into small chunks, sautee it in organic Pam or something similar, until it browns, then add sliced bananas. Heat until the bananas warm up. Then remove from heat, plate it up, and sprinkle cinnamon on top. Delicious!
