Not sure what's on their website but Whole Foods has a great app where you put in three items and it lists recipes you can make with them. Sometimes I still have to buy one or two items but it's a great app for those weeks I am trying to use leftover items. Also I find it easy to use in a store if I see something I like that's on sale.

Myra Kornfield's site is another great one to check now and then for recipes, blogs, and cooking classes www.myrakornfeld.com/index.php She has both flexitarian and vegan recipes on her site. Her book, The Voluptuous Vegan, has tons of great recipes. I haven't had a chance to look at her other ones.

Well, I'm sure it's already been mentioned before, but I love veganyumyum. I also check out veggieboards.com every now and then; it's great for resources and recipes and help. Some of the people can be pretty uppity so just watch out for that.

TAMNTN- High sodium content comes from canned and processed foods. If you soak dried beans and cook them yourself, you can control the sodium. Even if you rinse canned beans, you only get rid of about 40% of the sodium. Lentils are essentially sodium free; just don't buy canned lentils. Some of the Eden and Whole Foods Market canned beans are sodium free and are clearly labeled as such. There might be other brands that are sodium free as well.
Most vegetable broths are high in sodium as well though there are some low sodium products out there as well as low salt vegetable bouillon (Rapunzel brand is one).
Read the labels, and you'll soon learn which products are lowest in sodium. Use spices for flavor instead of adding salt. I use Mrs Dash Original in a lot of the plain dishes I cook in place of salt and have a shaker container on the table (it's a finer grind) instead of a salt shaker. I try to watch my sodium, and this is the strategy I developed for myself. Hope this helps you get started.

Why do so many vegan recipes have such high sodium? For example the ones on nutritionmd.org all have excessively high sodium, or at least the ones I looked at and I find that regularly across the board. I have an inner ear imbalance and have to keep my sodium at 1500 mg or less, which is something I would prefer doing even if I did not have this imbalance. Am I destined to eating only raw foods and bland cooked foods? Thanks!

Great ideas here! I especially like the collards and sesame seeds though I am a kale lover and will substitute that for collards. Do you like hummos? If so, you would appreciate baba ghanoush. If you dont know what it is, it's a roasted eggplant and tahini dip. You can use it as a dip. I personally use leftovers and stuff it into pitas with baby spinach or arugula and tomatos and red onions. For a snack or light lunch.
I second postpunkkitchen.com, pretty good recipes. Also, allrecipes.com is just as great if you do a vegan search. I have been learning that I can alter recipes that arent vegan to vegan by just replacing things. The best way I eased into eating vegan was to do simple swaps (organic soy milk/creamers) hummos or other bean dips for crudite or chips. Portabellas are great to replace any meat in a lot of recipes.

A good way to be a vegan for one is to buy a small crock pot. I can put beans, onion, a potatoe, some veggies & water or canned tomatoes in it before I leave for work and have dinner waiting when I get home. It usually makes enough for two meals, which is lunch the following day. I vary the beans, lentils, dried peas, white & sweet potatoes, adding chiles on occasion, garlic, whatever I have. I never get tired of what yummy conncotion is waiting for me when I get home, or get up in the morning. Viola

mmm...collards. I pick them fresh from my garden & chop. Heat an iron frying pan and spritz w/oil, add chopped garlic & seseme seeds, when hot add collards w/a little Braggs amino. Turn off just as it starts to wilt (iron pans hold heat) only takes a few minutes to cook. I add it to brown rice & well...I have it for lunch today!

I need vegetarian recipes for eggplant, kale, and collard greens (not in same recipe) Any ideas.
I did make a veggie soup in the crock pot, but I still have lots of these veggies left. (it turned out good)

Breakfast and lunch is not a problem at all,its supper I have the problem with. So what I have decided to do is on days that I don't want beans or tofu, I will just replace it with 20z of gimme lean sausage,faux italian sausage, or gimme lean meat. I love veggies I always have.And all the veggies on the meal plan I really love. I have looked over a lot of the vegan recipes on Spark, the really look delicious, the only reason I have not tried any is cause the servings are for big families and my husband is a carnivore and I am the only vegan, and I tried to see if I could divide it in half and it would still give to many leftovers, I love leftovers, but not over and over again and again.

I don’t know y the meal plans r so limited I don’t use them. I’m sure substituting one protein (vegetable or grain) 4 another is perfectly acceptable providing u keep the same portion/amount.

Why are the meal plans so limited? I follow them for now but I admit I will substitute, certain vegan foods for the ones on the plans some of the time. Like sometimes I might change beans for gimme lean. I for now would rather follow the plan and just substitute one for the other. I figure once I am at goal I will be able to expand a little more because I figure we get a maintaing plan

The best veg blog I know, truly a great coobook online! I particulary recommend Eggplant Paprikash, Srambled Tofu with Porcini Mushrooms, Polenta and Tofu Skillet, and Cauliflower Dal with Panch Phoran. All delicious, easy to prepare, vegan and fat free. Enjoy!

i haven't looked at vegetarian times in a while. they made me mad a few years back because they kept repeating recipes so i unsubscribed. i hear they're better now. i should cruise on over there. i do have one VT recipe that i've kept and used over the years. apparently many years as i'm seeing that it was in a 1996 issue. i love it because it's easy, tasty and mostly made of pantry items: www.ivu.org/recipes/mexican/mole.html

What are your favorite Vegetarian and/or Vegan websites? What do you recommend from them?
I frequent the recipes on Vegetariantimes.com a lot. The one recipe from that site got me into eating tofu. I had to find the right recipe to make it flavorable and I found it. It's not vegan, but I'm guessing you can sub for what isn't.
