I am glad that she separated and noted to Spelt as non Gluten Free. There has been a lot about coconut oil lately. And to think several years ago they were telling people not to eat it. How things change with time!

She uses spelt flour in some recipes and does point out in her intro that it's not gluten free. The apple cake (actually called "apple-cinnamon toastie") uses garbanzo-fava bean flour, potato starch and arrowroot. Oh and the ohhhh-sooooooo expensive coconut oil which she says is "higher in omega-3 fatty acids, is packed with lauric acid, stores in your body as energy and not fat, and supports the proper function of the thyroid, thus stimulating the metabolism."

I did a search for here website. She uses Spelt in some of her products at her bakery and still claims the food to be Gluten Free. Spelt is not gluten free but it is wheat free. Does she use the Spelt in the recipes?

Spelt is considered a pure, ancient form of wheat from back before man started cultivating and improving crops. People who are wheat free can successfully eat spelt because the it is free of the allergen that people react to. But it still contains gluten.

I have found that just about every Gluten Free Recipe that I make takes longer to cook then it should. I have a thermometer in the oven and it says that it is at the right temperature. But I always have to add 5-15 minutes to the bake time.

The apple cake turned out great, just had to bake it twice as long since I was using the microwave convection oven. That's supposed to cook faster, but maybe the thickness of the loaf pan cake was too much for it.

I checked a book out of our library called Baby Cakes by Erin McKenna, and bought a bunch of GF flour, coconut oil (very expensive), agave nectar, etc. and will be trying some of her recipes this week. Today I'll try the apple cake that she actually taught Martha Stewart (yes the real person!) how to make on her show. It uses garbonzo bean flour which I was happy to find at our HyVee. Question, what are the rules about sharing recipes from books? Eventually I hope to be experience enough at creating my own that it won't be an issue, but I don't want to break any copyright laws.

I take the Glutino brownie recipe, use the oil variation, double the eggs (or use egg substitute) and add 1 tsp baking powder. Comes out more like a cake. My brothers and my friends all love it.

Mark I am going to have to look at your carrot cake recipe. I haven't had a decent one yet. So far the 3 I have made I have thrown away. I made a vanilla Namsate cake this past weekend and it was terrible. I love the chocolate cake. I bought the BC cookies from Amazon, but haven't tried them yet. I hope I like them as I had to buy a box of 6.

It seems that since we have a General Mills Plant just a coup[le of miles away we would have the mixes here. But so for I have not been able to find them.

Leila, I agree that the older Betty H. books are not very good, But the new books are a lot better. The Wenniger book is really good along with the Carol Fenster Books.

I just had the new Betty Crocker yellow cake on my birthday and it was good, but not great. It is very dense. Not a fluffy cake at all. My cake was beautiful because my good friend decorated it professionally, and all my friends were able to enjoy it with me, but last year we had Pamela's and I liked it better. I think I'll keep looking for a better cake.

My mom bought a Glutino gluten free chocalate cake mix. I used egg beaters in place of eggs, applesauce in place of oil and soy milk in place of regular milk. I put gluten free whip topping in place of icing and mushed up strawberries w/nutrasweet on top. it was a hit everyone who was hesitant to try my gluten free products before loved this cake. Happy Birthday to Me!!! FYI my favorite cake was Strawberry Shortcake and today it still was.

Also Betty Crocker has come out with some new gluten free cake mixes, chocolate chip cookie and brownine mixes as well. The cookie and brownies turned out well, I took them to a pot luck and they were a hit. emoticon emoticon

I don't like Betty H.'s recipes. I tried a few and they just don't turn out well. I like the recipes in "The Best-Ever Wheat-and Gluten-Free Baking Book" by Mary Ann and Mace Wenniger. They don't take flour mixes and they aren't fussy. I hate having to make up a batch of a flour mix to make a batch of muffins and then having the rest of the flour mix just sit there. I don't eat many baked goods.

Whole Foods makes a terrific flourless chocolate cake. We have to order it ahead because it's usually sold out. They also sell it by the slice emoticon

This is the recipe on the back of the Swan potato starch box

Swan's Angel Food Cake

6 Eggs, separated
1 1/2 Cups Sifted Sugar
3 Tablespoons Lemon Juice
1 1/2 Teaspoons Grated Lemon Rind
1 1/4 Cups Potato Starch
1/4 Cup Boiling Water


Add lemon rind and lemon juice to boiling water and set aside. In mixing bowl, beat egg yolks until light yellow and then add sugar gradually until well blended. Add lemon water to the egg mixture and mix until blended. Fold in potato starch and set aside. In another mixing bowl, beat egg whites until still peaks form and then fold into the cake mixture. Place Angel food cake mixture into a 10 inch tube pan and bake at 300 for 30 minutes and then increase heat to 350 and bake 40 minutes longer. Invert cake pan and allow to cool .

I do not have the revised version so maybe that is the difference. Also we use a Silicon pan for cooking. I really think it might be part of the problem. Also I did not sift the flours.

I personally wouldn't try and substitute the flour. I know a person who can't have cornstarch and tried a sub and it was a total flop. The cookbook is The Gluten-Free Gourmet revised Edition. I have seen this recipe in a few other cookbooks.

If you do try, let me know, because the person that can't have the cornstarch would love a GF angel food cake.

Thanks! (I was thinking that there would be white rice flour in it.) I wonder if it would work to substitute arrow root for the corn starch. I guess it might be worth a try. What is the name of the cookbook this is in?

Here are the ingredients
3/4 C egg whites ----- 3/4 t cream of tartar
1/2 C powder sugar ----- 1/4 t salt
1/4 C potato starch flour
1/4 C cornstarch
1/3 C granulated sugar

It calls for dried lemon peel but I don't use it. I always double it and so far everyone I have made it for likes it.

Mark, hum, don't know what could have gone wrong. I have been making Betty H. recipe for years at least every other month and always get a beautiful cake. I do know if you don't sift the suggest ingredients it won't do as well. I know you can't use a taflon pan. I also double her recipe.

I did something wrong when I made that angel food cake. It formed a seperate layer on the bottom of the cake pan that was more like a hard jello. I followed all the instructions so I do not know what went wrong. The box of Swan's Potato Starch has a recipe on it just using the potato starch as the flour. I want to try that one.

my coworker makes AMAZING gluten free products, including one bite brownies....perfect for shoving a candle into but still staying on track with weight loss goals.

He's not quite up and running yet. Once his distribution increases, I'll let you know where you can find it.

The Nameste Cakes are excellent. My wife, who is not gluten free, likes them better then her regular cakes. I also like the Dodd and Rodgers but they are hard to find.

I like the Pamela's mix that I use but I usually add ingredients. What kinds have you tried? Several were mentioned below that I haven't tried but thought I would lokk for next time I am at Whole Foods.

my co workers chipped in and bought a gluten free cake from a nearby bakery for me before I went to a new department. Only problem was people were scared to try it because of it being gluten free so I wound up taking most of the cake home with me. Talk about temptation emoticon

You do not have to go without cake. I have made gluten free cakes every party for the last ten years. There are a lot of cake mixes available if yiu look in the health food stores or amazon. The Nameste Cakes are the best but the Pamela's and Arrowhead Farm ones are OK. If you can found it the Doud and Rodger's cakes are also really good. That is what I had our wedding cake made with.

It is hard to think of a birthday without any possibility to eat cake, gluten laden cake anyway. I did not think ahead for my birthday, but did pick up a GF cupcake at the Whole Foods freezer. It was yummy.

You can definitely make a GF cake - from scratch or a GF mix. My favorite is Pamela's Classic Vanilla Cake Mix. I have made it into carrot cake (that turned out very well!) or pumpkin spice cake or chocolate cake.

Of course, you can have cake on your birthday! There are numerous recipes available. You just have to make it from scratch, using flours other than wheat. So cheer up! There is almost nothing you can't do GF.

It is a sad realization. And you will experience it again and again with each birthday, holiday, wedding etc. However, each time you will get better at adapting. My suggestion is find a GF cake mix and make yourself a cake if it is that much of a concern. I have friends that go the GF bakery and buy me a cheescake. It's your day celebrate! If you don't have time to do it today do it over the weekend. :)
