Lindt 85%cacao chocolate bars. Per serving it is pretty low carb (less than 10, I think) and it has some fiber too. It is NOT a sweet flavored chocolate--somewhere between semi-sweet and baking chocolate, but I like it and it satisfies chocolate needs in the serving size. It is full fat and I often used it to reach calories when they were too low. It can be purchased most economically at Walmart--but I've seen it elsewhere as well, but it costs more too.

Does your husband need to gain or maintain weight? I have some suggestions of ways to add calories (and fiber) that won't kill his blood glucose level and it involves candy emoticon I forgot to add that the chocolate does not use artificial flavor or sweetener.
I rarely eat things that I shouldn't--I maintain pretty tight control--mostly because I am stubborn and refuse to have diabetes. (Yes, I know that I am diabetic but I am well managed with diet and exercise)

When Jon eats like that his blood glucose level stay so stable, but it does not help him gain weight. So he has to eat more fat and he is a sugar cheater.

The not weighing but once a month is Dr O's personal torture of me. He had Jon hide my scales. That and I am obsessed with the scales. I will step on them every hour on the hour. And when I see the natural ups and downs it discourages me.

I can see how you would have difficulty reaching calories and still be eating a lot of food. I was eating much like that when I first started altering my diet in response to the diabetes. I ate a lot of food and found myself struggling to reach calories. Ultimately, I just stopped trying to eat for calories and worked on nutrition and how I felt. My doctor and the diabetes educator were monitoring what I did and actually asked what I was doing because I was bringing my blood glucose levels down to normal so quickly. Does your husband eat this way as well? I'd bet his blood glucose readings would be pretty good on it. Don't laugh, but When I first read "palethic", I misread it as "pathetic".
I don't understand why you only weigh once a month though. What was the rationale for that?

My doctor has me on a modified palethic diet. I get NO grains, no dairy, no legumes, no peanuts, no cashews, no pod plants at all, no refined sugars.

I can have lean cuts of chicken, beef and pork. I can have fish and wild game meats, fruits, veggies (but not potatoes, sweet potatoes, peas beans, pods).

Modification:
High GI foods are only eaten in moderation,
I am allowed some cheese and yogurt in small amounts. 1/2 oz servings one or 2 times a day

WHY? The foods I was eating were leading me to an early death.

ok, so I am curious--what can you eat on your diet? Is it mostly veggies? I do a lot of veggies and I know that when I pile them on the plate I get full really fast but I do eat low carb, high fiber bread products, soy products, a few legumes (as in peanuts), nuts, fish--limited dairy (lactose issue)--stuff like that.

You'll get no fussing at all from me, Elizabeth. You are under Doctor's care and I am not a Doctor nor am I the "diet police". Anyway, I happen to be one of those who does not buy into the "your body retains fat if you don't eat enough calories". If that were true, no one would die of starvation--they would simply get fat. I dunno--it makes no sense to me. I am a diabetic and I totally ignored the recommendations of the diabetes educator as soon as I discovered that if I chose to eat the way she recommended, I'd be on diabetes medication and our of control with the blood glucose. I did it my way-- using my blood glucose levels and metabolism as a guide and it worked. In my opinion, when it comes to diets, one size does not fit all. Good luck with yours!

Okay I will bite, but none of you can fuss! I am under a doctors care and I see a nutritionist. I also cook for a diabetic house hold.

I stay between 350 and 800. Normally I am at around the 500 range! WAY UNDER WHAT IS REccomended.

But I am on a palethic diet (not as much a diet as a way of life). I do not ingest complex carbs, grains, sugars, legumes, and minimal dairy. Oh and I also watch foods with a high GI range. (those are not allowed in the house at all). (hubby is a diabetic with NO CONTROL)

Okay who is going to fuss?

No surfing. The waves were not great but I guess that was merciful because I can't use them. I went for a nice,delightful walk barefoot along the beach with my DH yesterday and a bit of a walk to a mall not too far from the beach. All told, 7.75 miles and blisters on my feet where I never knew blisters could occur. The balls of my feet and the fleshy part of the bottom of my heal. The blisters are huge and I am hobbled. I have to watch them to be sure they don't get infected. I am diabetic so it's sort of a dangerous scenario. I have well managed sugars so I'm not overly concerned, but I am cautious so I burned lots of calories yesterday on the walk and now--I get to sit on the beach and watch the tides. I got my bike out and will try some beach riding as soon as I master gettin off the bike without landing too hard on the feet.

My high is
1920 so I try to stay just below that, on my high week, which starts today
and my low is
1570 and I try to stay at that or just slightly above.
a few days last week I had days when I was way way under and had unusual things to get me to my low.

When you do a high week, is that within a range? I know that my calorie range is 1200-1500 so a high week would be 1500 and low 1200--is that how you do it?
I hope to be able to burn off calories like you just did during my vacation. I think surfing should burn off a few of them today.

Cat--Do you really do a high week and a low week? That's interesting. My sister and her husband lost weight by eating 2 small meals and no alcohol weekdays and eating whatever she wanted on weekends and drinking moderately on those days.

I am just under, was under 900 after supper...
but cherries, and pop corn, while unusual together, they fit the bill, got in 2 servings of fruit and got in some extra fibre from the pop corn.

I think I did pretty well. I've not had access to a computer today but I suspect I am under rather than over. My blood glucose levels are right on the money so I see that as a sign of success with my eating today.

I have found that if I fill in my food tracker on the weekend, I then print out the grocery list and then go shopping. If I do this then there is nothing in the store cupboard that I can be bad with!!!! emoticon

I'm actually under today! I have room for a snack. Strange. This never happens to me!! Today was a crazy day. Didn't really have time to think about eating.
Fast food does get me all the time, especially when the kids get it. I always snitch a few fries.

I am usually able to stay in range, but I have discovered that any kind of fast food is a "trigger" food for me, and shoots the whole works all to h*ll. I'm just going to have to give up fast food altogether.

Dorothy, this is a great thread! So far I've done great with the calorie range. I usually do pretty well up until 11pm, then the later I stay up, the more I lose it.
I am ashamed to admit that last night I ate an entire jar of sunflower seeds. At least, they are gone. I am feeling a bit better now so I've been starting back to exercise so I should be ok.
Problem is, I often slip at night after a flawless day. I eat foods that I know won't do damage to the blood sugars, but will ultimately cause other problems in the long term. My exercise levels is what has saved me from regaining, but I worry that if I get sick or unable to exercise, as in this past week, the weight could creep back up. hasn't happened yet, but it could.
I know I won't do it tonight because I already announced i stayed in range today so that would work for today. I have a warped sense of conscience and mine won't allow me to eat more now. But in general, how do others cope?

I actually stayed in range today!! Even though my co-workers got take out that I really wanted, I refused the fries and onion rings and yummy greasy food. I stuck to my cheerios, apple sauce and peanut butter sandwich- pretzels for snack. Even having pizza for dinner, I did well, today emoticon
