Poached Eggs over Spinach & Mushrooms

This healthy breakfast gives you a delicious way to enjoy the nutritional benefits of vegetables with your poached eggs in the morning. Using frozen spinach makes this recipe quick and easy to do with minimal effort.

Prep and Cook Time: 20 minutes

Ingredients:
4 large free-range chicken eggs
1 tsp light vinegar, (rice, white wine, or apple cider)
1 TBS chicken or vegetable broth
˝ medium onion, chopped
2 cups sliced crimini mushrooms
1 medium tomato, seeds and excess pulp removed, chopped
3 medium cloves garlic, chopped
10oz package frozen spinach, thawed and excess water removed
salt and black pepper to taste


Directions:

Bring water to a high simmer in a 10-inch skillet with 1 tsp of vinegar.
In a separate skillet heat 1 TBS broth. Healthy Sauté onion and mushrooms in broth for 5 minutes over medium heat stirring frequently.
Add tomato, garlic, spinach, salt and pepper and sauté for another 2-3 minutes.
When water comes to a high simmer poach eggs for about 5 minutes, or until whites are firm. Remove from water with a slotted spoon and place over spinach mixture.
Serves 4

Healthy Cooking Tips:

Make sure you do not add any salt to the poaching water for the eggs. The salt has a tendency to dissolve the egg whites. By making sure there is enough water in the poaching pan to cover eggs, you avoid the eggs sticking to the bottom of the pan. You want the eggs to float while they cook. This also avoids breaking the eggs when you remove them with the slotted spoon. It is also important that the water is at a steady simmer without boiling. You may want to lay the spoon with the egg on a towel briefly after removing egg from water. This allows the towel to absorb some of the poaching water, and won't dilute the flavor of your mushroom, spinach mixture.

Sorry - No! but here's a terrific recipe that tastes very good. I also use Cabot 75% fat free cheddar cheese - sometimes crabmeat and yum!

SERVES 2
Ingredients
2 medium russet potatoes
Butter-flavored cooking spray
1 tablespoon minced fresh rosemary
1/8 teaspoon freshly ground black pepper



Directions
Preheat the oven to 375 F.

Wash the potatoes and pierce with a fork. Place in the oven and bake until the skins are crisp, about 1 hour.

Carefully — potatoes will be very hot — cut the potatoes in half and scoop out the pulp, leaving about 1/8 inch of the potato flesh attached to the skin. Save the pulp for another use.

Spray the inside of each potato skin with butter-flavored cooking spray. Press in the rosemary and pepper. Return the skins to the oven for 5 to 10 minutes. Serve immediately.

Here are some terrific recipes for including food of the week, Collard greens into your diet.

I especially liked this one.

Poached Eggs Over Collard Greens & Shiitake Mushrooms

This recipe is a delicious and healthy breakfast that gives you an interesting way to enjoy the nutritious benefits of vegetables with your eggs. The flavor of the dressing is very complimentary, it will sustain your for hours, and will surely be a favorite dish in your home.

Prep and Cook Time: 20 minutes

Ingredients:
6 cups chopped collard greens (stems removed)
1 medium onion cut in half and sliced thin
6 fresh shiitake mushrooms, sliced medium thick stems removed
4 fresh free range chicken eggs
about 4 cups water
1 TBS apple cider vinegar, or any white wine vinegar
Dressing
1 TBS fresh lemon juice
1 TBS minced fresh ginger
3 medium cloves garlic pressed
1 TBS soy sauce
1 TBS extra virginolive oil
salt and white pepper to taste


Directions:

Bring lightly salted water to a boil in a steamer. Rinse greens well, fold leaves in half and pull or cut out stem. Discard stems. Chop leaf and steamfor about 7 minutes. Add mushrooms, onion and steam for another 5 minutes.
While steaming greens, get ready for poaching by bringing water and vinegar to a fast simmer in a small, shallow pan. You can start on high heat, and once it comes to a boil, reduce heat to a simmer before adding eggs. Make sure there is enough water to cover eggs.
Mix together lemon juice, ginger, garlic, soy sauce, olive oil, salt, and pepper in a small bowl.
When greens are almost done poach eggs until desired doneness. This will take about 5 minutes, or just until the white is set and the yolk has filmed over.
Press greens with the back of a spoon slightly to remove excess water. Remove vegetables from steamer and toss with dressing. Remove eggs from water with a slotted spoon and place on plate of tossed greens.
Serves 4

That is a lot of protein! I am always short on protein and need to drink protein shakes. Its not easy turning into a meat eater from having been a vegetarian all my life. I can cook as long as I do not have to clean the sea food or meat...eating is slowly, very slowly... getting easier!

I usually don't have canned fish in my apartment (other than tuna) but on her last visit, my aunt gave some some random stuff that I had no idea what to use with. So, I created this...

Chipotle Seafood Penne

Ingredients:
1 can- Polar Tiny Shrimp
1 can- Chicken of the Sea- Pink Crab
4oz- Ronzoni, Whole Wheat Penne Rigate
2 Tbsp- Lawry's Baja Chipotle Marinade
4 Tbsp- Breakstone Fat Free Sour Cream

Directions
1. Cook pasta according to package directions. Drain. Return to stove.
2. Mix sour cream and marinade together in a bowl.
3. Drain all liquid from shrimp and crab. Combine with pasta.
4. Add sour cream/marinade mixture over other ingredients. Stir well over low heat until heated through.

Thanks Leslie. Have you looked at my shared cook book on line? Nita's Indian low fat and low carb recipes? You can access it via my spark page. Feel free to shoot any questions you may have.

She was using Hing powder ( compounded asafoetida which is excellent to cure stomach illsnesses )

I was brought up on the western coast of India south of Goa, where people cooked really healthy food. Most Indian restaurants only serve those dishes that are heavy in cream and oil or deep fried and Masala dosa and other S.I. crepes that are very fattening which we ate only as a treat once a month!!! I have tried to cut down on oil and modified to post some of the recipes.

There is a website that gives many Indian low fat recipes too although I am yet to experiment with their recipes ;-) Check it out:

I just watched that video; that potato and cauliflower dish looked wonderful!
Can you post more Indian recipes, Nita? I love the Indian food I have had, but I must admit I haven't had very much.
I am always concerned that I can't get all the ingredients, such as mango powder, and something else she said, but I could not understand......
I would love to be able to make some delicious Indian meals. We used to have an Indian restaurant here in town, but it has closed now. They had a wonderful lunch buffet, so I was never sure of the names of the foods I was eating, but I liked everything!

Basic Fettucine Alfredo

Ingredients:
8oz- Tofu Shirataki
1 Wedge- Laughing Cow Light Garlic & Herb
1 Tbsp-Parmesan Cheese, grated
1 tsp- Breakstone Fat Free Sour Cream

Directions:
Rinse fettuccine noodles VERY well. Microwave them for one minute, then drain them and pat dry. Add cheeses and sour cream. Mix thoroughly. Microwave to help melt cheese further, and mix some more.

Now, you have inspired me to cook it Thai style, being a fan of Thai cooking! The lemon grass and pepper can get rid of sinus and other mucous along with strengthening of immune system for the prevention of a cold...I know, the recipe is modified Thai and the real one would have all that and more (ginger) from scratch!

Keep in mind Jambalaya is a wholesome meal with protein and the soup is just a soup...almost vegetarian and you need to cook other sides or an entree.

When you wake up this weekend, depending upon your energy level, mood to cook, choose the recipe;-) Hope this helps!

If it's more convenient for you to read, I also posted this recipe on SparkRecipes so you can snag the link from my SparkPage!

Easy, Tasty, Healthy Chicken Parmesan with Angel Hair

Ingredients:
3oz- Lean Chicken Breast, no skin, thinly sliced (Like Perdue Fit & Easy)
8oz-Tofu Shirataki, Angel Hair-Shape
.25c- Kraft Fat Free Shredded Mozzarella
.25c- Ian's Panko Whole Wheat Bread Crumbs
.5c- Trader Joe's Organic Spaghetti Sauce with Mushrooms (heated)

Directions:
To prepare the chicken:
1. Place .25c of Whole Wheat Panko Breadcrumbs in a Ziploc baggie. Add preferred seasonings (I recommend Italian Mrs. Dash Seasoning). Seal bag, removing all air and using a rolling pin, crush the breadcrumbs. Once you reach your desired consistency, pour the breadcrumbs evenly onto a plate.
2. Coat both sides of the chicken breast in the breadcrumb/seasoning mixture. If desired, you can first dip the chicken in an egg or milk, but this adds extra calories and isn't necessary to get the breadcrumbs to stick.
3. Lightly spray the chicken with olive-oil flavored cooking spray, if desired. You can also drizzle olive oil over the chicken, but again, this will add additional calories. Also use the nonstick spray on your pan.
4. Bake the chicken at 350 degrees for about 20 minutes, or until no longer pink inside.
5. Spread 1 Tablespoon of sauce on the chicken and sprinkle with the fat-free mozzarella cheese (as much or as little of it as you prefer). Return to oven until the cheese melts.

To Prepare the Tofu Shirataki:
1. While the chicken is baking, open the tofu shirataki and drain out the liquid.
2. Place the tofu shirataki in a colander and rinse VERY WELL under running water. (I rinse mine for a good 5 minutes to remove that lime juice!).
3.. Place the tofu shirataki on a plate and pat dry with a clean, lint-free towel or paper towels.
4. Microwave for one minute.
5. Remove from microwave and pat dry again- the drier you can get it the better!
6. Return to microwave for an additional minute.
7. Serve with remainder of sauce and any leftover shredded cheese.

I just made this one Sunday night. With the rice, it is VERY filling. makes about 8 servings...

Cabbage Jambalaya
1 pound ground beef
1 pound smoked turkey sausage, cut into 1/4 inch slices
1 onion, chopped
3 stalks celery
1 clove chopped garlic
1 medium head cabbage, chopped
1 (14.5 ounce) can stewed tomatoes
14 1/2 fluid ounces water or chicken broth
1/2 cup uncooked rice
garlic salt, salt, fresh ground pepper, Cajun seasoning - all to taste
In a large stock pot over medium high heat, combine ground beef, smoked sausage, onion, celery &garlic. Cook til beef is evenly brown. Stir in rice, cabbage, tomatoes, and liquid. Season with garlic salt. Bring to a boil, then reduce heat to low. Cover and cook for 35 to 40 minutes, or until rice is done.

Here's a recipe from WHFoods for Spicy cabbage soup to go with our food of the week - Cabbage!

Prep and Cook Time: 45 minutes

Ingredients:
1 medium onion, quartered and sliced thin
3 medium cloves garlic, chopped
1-2 tsp minced fresh chili pepper (serrano, or jalapeno)
2 tsp ground coriander
1 TBS dry mustard
5 cups + 1 TBS chicken or vegetable broth
2 TBS fresh lemon juice
2 medium sized red potatoes cut in ˝ inch cubes, about two cups
1 15oz can diced tomatoes
3 cups thinly sliced Savoy or green cabbage,
salt and black pepper to taste


Directions:

Heat 1 TBS broth in a medium soup pot. Healthy Saute sliced onion over medium heat for about 5 minutes. Stir in garlic and minced chili pepper. Continue to saute for another minute.
Stir in dried coriander and mustard, and add broth, and rest of ingredients except cabbage, salt and pepper. Simmer for about 20 minutes, uncovered, or until potatoes are tender.
Add cabbage, and cook for another 5 minutes. Season with salt and pepper to taste.
Serves 4
Healthy Cooking Tips:

Add more spices and chili pepper if you would like it spicier.

Let soup simmer for a little longer for a richer taste.

Thanks waterluvr. I love to experiment with recipes mine and others'. There's plenty of substitution ideas in my cookbook. If you think of one, I love to hear about it too:)

Just wondering how about we continue this thread with various recipes that are either easy to prepare or have a few simple ingredients or are unique or one of your favorites that you want to share with all your spark friends! Thanks.

Here's my contribution: Indian style crispy fried fish....this is really a deep fried crispy fish recipe modified for a healthier pan fried version that is EASY to prepare and tastes just as crispy, in less than 10 minutes!

Ingredients

Ingredients:


Matlaw's Wild Caught Salmon Filets, 4 (16ozs)
Turmeric, ground, .25 tsp (optional)
Chili powder, .5 tbsp (use paprika for mild taste).
Asafoetida powder, 0.25 tsp OR garlic powder
Salt, .25 tsp or to taste
Coriander powder, 1 tbsp
Soji / Cream of wheat or Cream of rice uncooked, 1/4 cup, enough to coat the filets.
Olive Oil, 1 tbsp or oil spray from a diffuser.

Directions
Mix all the spices together with salt and sprinkle evenly over, on both sides of the fish. Let sit about 5 minutes. Spray a non-stick pan or pour a tablespoon of olive oil on a non-stick pan and heat to spread the oil. Gently roll the fish on both sides on a bed of cream of wheat/rice, till it's completely covered. Gently place all the filets in the pan and cook each side for about 4 minutes or until done! Tastes very crispy, traditional Goan style fish without the added oil. Serve with lemon or lime wedges. Serves 4-5 depending upon the size of fillet as an entree, or 8 as a side dish.

Number of Servings: 4 as entree at 4 ozs. or 8 appetizers at 2 ozs. each! Enjoy ;-)
