Same with my dear husband and me Woubbie. The more we get "real" with food and adjust away from processed...which has gone way beyond boxed meals, the better we both do with allergies, asthma, arthritis, just everything. Now, as we transition to raw dairy we still feel we are improving.
I was raised in wilderness with wild organic meats/fish/ and on raw dairy. We still got processed foods via canned goods and other ways, but flour, corn and vegetables were not the GMO poison they are today.
Yeah, the carbs sneak into everything. I started buying block cheese a few months back, both to avoid the carbs in the additives they use to keep it from clumping, as well as the additives themselves. My DH has a mystery food allergy and it's in processed foods, but we're not sure what it is. I have to say, every time we improve our whole food intake his reactions get further and further apart!
I was doing about 40-50 carbs a day. I can not do 20! Ha! Trying to keep calories under 1200. I have type 2. Years ago I did 20- don't ask me how I did it! youth! I had carb flu for the first 5 days it was bad. I lost no weight and then today, day 7 I'm down 3 lbs.
Also, if you can, use real heavy whipping cream in your coffee, Coffeemate, etc. has sugar in it. Also, learn to read labels to look for hidden sugar. You can do it. Good going!

It is a surprise how carb creep is at work all the time. Absolutely just give up starchy everything. Know that processed cheese, including shredded cheese is coated with starch to keep it from sticking back together. You might want to start learning how to make a few condiments because even the ones that are "low carb" have a way to go.
