I sometimes would bring to work, sliced red and orange peppers, grape tomatoes, cucumber stalks (sans seeds), and dressing of your choice for dipping. I sometimes would bring a hard boiled egg for protein. Bev from CA

Thanks for the ideas! I'm trying to limit dairy, but I think I can try some variation of the ideas.

When I worked, I would bring in Pita Bread and then add hummus and sliced cucumbers and sliced tomatoes. (all packaged separately). How about celery with peanut butter or with Laughing Cow low fat cream cheese wedges and some grape tomatoes? Bev

I tend to do a Greek yogurt for protein paired with fruit and carrots or snow peas. I get variety by switching yogurt favors, changing up the fruit, etc

Hi. I'm living down here in the Rio Grande Valley where they make lots of tortillas and they wrap the tortillas in aluminum foil. Give it a try.

Hi all. I'm almost at the start from new stage. My current job has a terrible and uninviting staff lounge, so I don't go there for lunch which means no hot lunches. So, I'm looking for ideas for cold lunches.

I've thought about:

pasta salad - homemade w/ tuna or egg
boiled egg - need ideas for sides - perhaps salad?
the obvious - sandwich (I've done these for months and am just about burned out)

Also, I'd love to do wraps with hummus or some other filling, but need tips for keep the wrap nice and soft rather than dry.

All ideas appreciated. One tiny caveat - not a huge veggie eater, though I do like carrots, most beans, peas, spinach....
