The extension services at all state agricultural universities publish pamphlets/booklets on food preservation. Here is a link to South Dakota State University's site: http://www.sdstate.edu/sdces/fcs/food/safe

Pretty sure you need a gas stove for the more reactive temperature control. Certain work best when done in pressure cooker, but a hot water bath canner works too. Ball has a canning cookbook with times and recipes for the brine. I'm just lucky my mom shows me how. Good luck.

I remember my Mom canning a bunch of stuff, most fondly the new potatoes when I was kid. We also made our own jelly. I think some of the talents are almost lost arts. Good for you. I have a tiny freezer as well, but also not much pantry space, so I'm also trying to learn seasonal.

Don't have a foreman, but sounds like a good idea. This year I will more than likely can a bunch of my own vegetables only because I will lack the freezer space to put them up as frozen

Imjustfluffy - Zucchini is a veggie I like and love your ideas. I'm going to try and give it a go this weekend. Thanks!

I live in an apartment, which does provide grills, but they are not really close by, so while I like the idea of grilling, I probably won't. Unless I can find my Foreman grill, then I might. emoticon

I use a foreman grill or my waffle iron flat plates to "grill" veggies in tinfoil all year round. I do admit to using one pat of butter only for special occasions.

Primarily steamed green beans. But with grilling season upon us put just about any veggie in a foil pack with diced potato, an ice cube and a little olive oil. Gonna try grilling on cedar planks this year too. Good luck.

Zuccini (or any squash) & onions fried with pam or olive oil. Simple & fast & very tasty...to that you can add parmeson or mushrooms or tomatoes and can add italian seasoning for another change up.
I've also added whipped eggs to it on low heat and when it's cooked I slice it in pie slices with parmeson.

I'm getting the hang of cooking a variety of things, but I'm still pretty narrow in my veggies, not only in the ones I eat, but how I fix them. So, my questions is what is your favorite veggie and how do you cook it?
