I freeze chopped onions, spinach, mushroom and peppers. I toss a handful into a pan, cook until soft and then add an egg. You can put it in a tortilla, a pita, or between two slices of bread and take it to go! Sometimes I do a protein shake: chocolate protein powder, skim milk and a banana all mixed up in a small blender.

The Daily Spark today featured 12 breakfast on the go recipes. A couple of them made me pause, but there were a couple of muffin recipes (they freeze well), some smoothies, and a casserole or two, which might also freeze well.
