I would chop up some vegetables. Throw them in a hot saute pan with the scallops still frozen. Season with salt and pepper. Cook them while stirring so they do not burn. Remove the vegetables and the scallops to a plate. Pour in some white wine to deglaze the pan and make a sauce. Put the scallops and vegetables on top of brown rice. Pour over the white wine sauce.

I love scallops! I usually just pan sear them,get your pan really hot and put in the scallops ,cook them for a few minutes each side,that's all they take.I have them with just steamed vegetables usually,sometimes I put a splash of sweet chilli sauce with the scallops when they are cooking,You can have them with pasta as has been suggested or even with a nice salad.

Laurie's link sounds like a good recipe... I recommend that you do some sort of pasta or mix it in with something else (baking them is good with that). When you have frozen scallops it limits things a little. The thawing process does something funny to them. (I much prefer fresh scallops...lol probably because it makes a great sushi dish)
