Sorry, I have not been posting here. But I do put recipes on my blogs. I am cooking only for me (hubby hates veggies), so the recipes I write need to be divided and frozen in portion sized baggies.

Remember simple stir fries. I always have onions & colored peppers. You can now find single portioned brown rice on the rice isle. But cook your own and have 1/2 for dinner and 1/2 a couple of days later with some other meal. I ate loads of stir fry when I lived alone.

You can also sprinkle on some fajita/taco seasoning and presto you have fajitas

If you are lucky enough to have a deli with good roast beef you can make easy philly cheese stake sandwiches just sauté the onion & pepper till you doneness preference, add the sliced roast beef and a dash or two chicken stock or some type liquid. place on a bun or brown rice and top with provolone cheese.

I live where you can get a 1/2 rotisserie chicken. That helps a lot.

If you haven't tried this recipe I suggest you give it a try. They are Blueberry Flaxseed Muffins and they are out of this world. I had to give the recipe to 3 of my gal friends after taking them for a morning brunch get together. We had a foot spa morning! Fun, fun, fun! I'm going to have one for my mid-afternoon snack today.

Chicken Teriyaki for one

Ingredients
6 oz. boneless, skinless chicken breast, cut into thin strips
3 T. low-sodium teriyaki sauce
1/4 t. garlic powder
1/8 t. ground ginger
black pepper
1/2 c. red bell pepper, cut into thin strips
1/2 c. snow peas, cut into thin strips
1 c. broccoli, cut into small equal sized pieces

Directions
Combine teriyaki sauce, garlic, ginger & black pepper in small bowl.
Add chicken strips & combine thoroughly with marinade. Refrigerate at least 30 minutes or overnight.
Heat small saute pan coated with nonstick spray over medium heat. Add chicken & marinade to pan & cook thoroughly until chicken is no longer pink.
Add vegetables, cover & cook approximately 7 minutes.

Serving Size: makes 1 serving

Stumbled upon a delicious breakfast this morning.....was stirring my oatmeal and wishing I could think of a way to work vegetables into the menu when I thought about pumpkin! Half a cup of pumpkin stirred into the milk and oatmeal and cooked with pumpkin pie spices and Splenda and topped with homemade applesauce. So good and filling. A new favorite breakfast!

Yes! I use rice vinegar with the cucumbers, plus onion rings, and tomato slices or half cherry tomatos.

Pizza-fied Chicken
PER SERVING (entire recipe): 282
calories, 5.75g fat, 868mg sodium, 10g
carts, 2g fiber, 4.5g sugars, 44g protein
points plus ww value 6·*
Prep: 15 minutes
Cook: 15 minutes
Ingredients:
5 oz. raw boneless skinless lean chicken breast cuttet, pounded to1/2-inch thickness
1/4 tsp. garlic powder. or more to taste
1/4 tsp. onion powder. or more to taste
1/8 tsp. salt, or more to taste
118 tsp. black pepper, or more to taste
1/4 cup diced green pepper
1/4 cup sliced mushrooms
2 tbsp. diced onion
1/4 cup canned crushed tomatoes
1 stick light string cheese
4 slices turkey pepperoni. like the kind by Homel). chopped
1 tsp. reduced-fat Parmesan-style grated topping
Optional garnishes: crush.ed red pepper. fresh oregano
Directions:
Season chicken with garlic powder. onion powder. salt, and black pepper. Set aside.
Bring two skillets sprayed with nonstick spray to medium heat on the stove. In one skillet, cook bell
pepper, mushrooms, and onion until softened, 4 - 6 minutes. In the other skillet, cook chicken until cooked
through, about 3 minutes per side. (Alternatively. use one skillet and cook the veggies and chicken
consecutively.)
Place crushed tomatoes in a small bowl and season to taste -with the garlic powder. onion powder. salt, and
black pepper. Evenly spoon seasoned tomatoes onto chicken in skillet. Tear string cheese into pieces
and place over the tomatoes.
Top chicken with veggies and turkey pepperoni. Cover and continue to cook until cheese softens. 1 - 2

Found another hunger fighting idea.

Mixed salad greens
pickled cucumbers
topped with home made salsa.

Easy to put together, really tasty. Like to eat while dinner is cooking.

One of my favorite go to salads are made with cucumbers, apple cider vinegar, salt, pepper, dill and water. It lasts forever, well almost, and is instant food before dinner. Can't live without it.

Threw together a sauce last night to put on top of our salmon. We loved it so I thought I would share.

In a food processor squeeze juice of 1 large lemon, 3 large cloves of garlic, 1 tsp of honey, 1/2 large red chili pepper, 1 tsp finely chopped cilantro, dash of salt and pepper.

Tired of PLAIN GRILL Chesse or with BACON or even TOMATO well I have a new kind that I expermented with this week & that is GRILL CHESSE & STARWBERRYS which I sliced up my STRAWBERRYS & put them between 2 slices of CHESSE which were in 2 slices of bread for the SANDWHICH. I finally got a chance to make this recipe. It was really good. I added mushrooms and green peppers. I think I will probably use the sauce on veggies more often than make the whole dish but that is only due to my chicken aversion lately emoticon It went sooooo well with the mushrooms. Yum.

I made a really easy and quick soup tonight that was absolutely delicious. I got the idea from this site, but revised it a little based on the groceries that I had in the house.

It makes 10 - 1 cup servings:

I call it "5 Ingredient Soup"

1 can black beans (rinsed and drained)
1 can chili beans (don't drain)
1 can whole kernal corn (don't drain)
1 can chicken broth
1 can diced tomatoes

Just add all the ingredients together in large saucepan and heat thru. If you'd like more spice you could add a can of Rotel.

Very flavorful and if you'd like to cut back on sodium you could use frozen corn, but may need a tad bit more broth or water if you do.

Cans are all around 16 oz.

The topping is included in the calorie count, at least that's my understanding of the recipe. But you're right. They're really tasty without the topping too.

I cook my butternut squash whole in a larger slow cooker in the same way as this pumpkin recipe: http://healthyslowcooking.com/2010/10/11/b

That way it's pureed in the skin and you can easily cut it open, remove the seeds, and scrape out the flesh.

Thanks for sharing! Both look good. I have what I call a Baby crockpot and will see if it's 1 1/2 or 2 qt. I think it might be 1 quart. For the butternut squash, would one just cook the squash and then puree it? Sorry, my cooking skills are still being developed as are my veggie eating skills.

Forgive me if I shared this earlier but this the best! Cranberry relish - 1 apple, 1 orange with peel, 1 bag cranberries (a pound give or take) and 1 cup splenda. Run all the fruit through the food grinder or processor add the splenda and into the fridge. OMG it is so good - great for thanksgiving, great throughout the winter months as a side dish.

I may have already shared this link for the One Minute Peanut Butter cake, but I don't think it was here!

I make the cake without chocolate chips (save calories & not a big chocolate eater) and instead of the icing, I poke the hot cake and pour 1 Tablespoon of Grade B Maple syrup over it. I'll have half the cake for a snack one evening, and the other half with turkey sausage or bacon for breakfast the next morning. SO easy, SO good & I have to spread the news!

Well I have a great idea...but I don't have exact measurements. However, it's self explanatory. I make mini pizzas using tortillas or pita bread. Just take tortilla/pita bread and put tomato sauce, whatever cheese and toppings you want on it and put it in the oven until slighty brown and cheese it melted at about 350-375 degrees. It's SO good! I've topped mine w/ feta cheese, mushrooms, olives..or I've used mozz cheese, mushrooms, jalepenos and pieced up turkey bacon(which of course I cooked beforehand). Delish!!

New here, so stop me if you've heard this one!!!!

One-Minute Cake For One

Box of angel food cake mix
Box of cake mix of your choice

Mix together thoroughly in zip-lock bag

Measure 1/3 cup of this mixture,
Stir in exactly 3 Tbs. water in a small dish or mug

Bake one minute in microwave.

You can make lots of variations, such as strawberry cake mix with 3 T strawberry flavored Kool-aid or Crystal Light in place of water.
Or replace 1 Tbs of water with lemon juice and use a lemon or pineapple cake mix.
Just remember, whatever flavor cake mix you use, it is to be mixed with an angel food cake mix.
I have put stawberries and a dollop of Cool Whip, or pineapple on mine, and once I placed 8-10 choc chips on top and nuked it a few seconds to soften, then spread it.

Now you can have your cake and eat it (all) too!

The honey mustard chicken looks good except for the amount of garlic it calls for. I LOVE garlic but I don't think there is any way I would use two heads (bulbs) of garlic for this dish, half that maybe but I'd advise using no more than half a dozen cloves to begin with then increasing the amount the next time you prepare the dish if you don't think it was garlicky enough.

LILMISS_O - We love walnuts! Our friends in California have walnut trees and I got to harvest some once when we were visiting. :)

My new favorite recipe with walnuts is baklava, made entirely with honey. It's definitely a special treat recipe...something to eat in moderation. ;) My husband said it was the best thing I ever made. EVER. And friends concurred. It didn't last long.

I would think if you already had oat flour you could use that rather than making your own or it wouldn't take much to make your own.

I usually cook this once a month or so, and just realized it's a pretty good 1-2 person meal. Definitely left overs, but i like it hot or cold

The recipe calls for the grill, but i put mine under the broiler
cookie sheet covered with foil, cooking rack on top, sprayed with pam, put chicken on that.
I cook for 4 min, baste, cook for 4 min, turn, baste, cook for 4 min - check done-ness and eat!

To share a cookbook, go to your cookbook. Make sure you're at the Public view (there's a button there on the main page that says something like Public view). If it's not the public view, the link probably won't work. I learned this the hard way.

Once there, go up to the URL bar and simply copy the link.

What I do is put in recipes.sparkpeople.com and enter and then under the keywords, put in the name of the book. It is called Favorite Recipes from Irish Ei.

It's great with goat cheese! Also I like to add shredded chicken if I have leftovers or a bit of prosciutto after it bakes. It definitely needs something with it to serve, I like mixing chives with 0% Greek yogurt or low fat sour cream and dotting it on top after baking.

So this recipe isn't exactly for 1 or 2 people, but it makes great leftovers that are always gone by the next day! I usually have two slices, my boyfriend has 3 or 4... and it only makes 8! it's a delicious pizza. If you're feeling left out because there's no cheese - this is awesome with a bit of sour cream and chives dotted on top after baking.

It's considered to just be the 1/2 breast in the package. They're pre-packaged in 1/2 breasts for this reason. Hope that helped emoticon

Hi Ann. I'd probably interpret is as 1/2 of 1/2, if that makes sense. Since I usually buy them in 4 to a pack, I'd use 1/2 of one of the 4.

Maybe the recipe gives ounces as well?

I have a question about chicken breast in recipes -- if the recipe calls for 1/2 chicken breast, does it mean 1/2 of the whole breast or 1/2 of the 1/2 breast we usually cook? I know it might be different per the specific recipe but does anyone have a rule of thumb?

I like Boca (veggie) burgers, and I will put one is a small skillet with about a quarter to half cup of red wine. I cook until the wine is gone, and stick it in a roll. Completely changes the taste!

When searching I also found quite a few hits for beef cubed, most entered by members and after looking at a few, not many matched.

Also, I did a search for lean beef steak nutrition in Google and got several sites. You'll just have to pick one that seem right to you.
