I travel on business most of the time, and find most restaurants wil happily hold the potates, rice etc or substitute some steamed veg.
Failing that, McDonalds have some pretty good salads, ask for the low fat dressings and grilled chicken. Panera bread has several awesome soups & salads and the calorie counts are posted right on the menu. Resist the $0.99 special offer on the pastry though.
If you order salad ask for the dressing on the side. You can control how much you use, alternatively dip your fork in the dressing then the salad.
