I like a salad with about a cup of shredded cabbage, a cup of torn spinach leaves, cilantro, and a peanut dressing or sauce. It has a slaw-like consistency. I've even added edamame, chopped apples, and corn. I guess everything is good with peanut sauce!

Y'know, you may want to also consider other ways to use cabbage. I love finely chopped/shredded cabbage in my pocket bread sandwiches; quick steamed in stir fry (gotta keep some of that crunch!); as a filler for tacos or rollup types of sandwiches; but as a salad, I love making cabbage - usually nappa/chinese cabbage, and some regular green cabbage, finely shredded and mixed with pineapple chunks, shredded chicken or turkey breast (or poke - a raw fish side dish - so ONO!) some ramen noodles crumbled and quick dry sauteed, green onion, and a sauce of rice vinegar, soy sauce, honey (or some sugar or substitute) toss together and try to limit your portions ha ha ! I usually add a splash of srirachi sauce to mine, I love the heat.

We'll be best friends until we're old and senile, then we'll be NEW freinds!

i just use anything i find on line...i love bobby flay's coleslaws or tyler florence's...i don't make one in particular...

have you tried a nice jicama and watermelon salad?--OMG that's amazing too!....

i don't do anymore mayonaisy coleslaws anymore...i do ones with vinegar and they are amazing...learning that you can add all kinds of veggies!

I've found out that cabbage is good for my stomach and coleslaw is an easy way to get it (espeically in the summer).

Does anyone have a good coleslaw recipe?
