I've heard of spelt. People with wheat allergies use it. I have some but haven't used it yet. I'm not sure how yet. I've seen spelt tortillas, buns and breads in the heath food store. The buns are pretty good.
Any of you familiar with spelt? I just learned about it from a newsletter I subscribe to. It's in the wheat family, and can be used to make bread, cakes, biscuits, tortillas, or anything that you might use flour or wheat in. It sounds like something I might want to try.
