Anything that goes in a wrap (summer time) and then anything I can make into a stew for winter time. If I don't have quick and easy things to make, I end up eating things like nuts or crackers instead of cooking.

Good idea Will. I never thought about eating them as a snack. I do get the small 'snack size' packs of sugar snap peas at Krogers to snack on at work sometimes.

I forgot to mention: last night, I had edamame for the first time. That’s a nice healthy snack. It is high in protein and you can cook them and season them up to your liking and they can easily be eaten on the go.

I like to snack on bell peppers and celery too. I'll use hummus, salsa, or some Dannon all natural FF yogurt mixed with some Fiesta Ranch dip mix to dip them in.

I like making things I can pop into a tortilla wrap or pita pocket. I make a stir fry mixture with rice, beans, and mixed veggies that work well.

I also cut up some orange slices and apple slices and put into a zip lock bag. Sometimes, I squeeze some lemon juice onto the apples so they don’t turn brown; but usually when I put them in the same bag with the orange slices (sometimes I use grapefruit), the juices are enough to work well on the apples.

I also like to have hummus and I cut up some celery or peppers or whole wheat crackers to dip in it. That’s a nice snack on the go.

Being vegetarian means (to me) that I mostly have to prepare all my own meals. (Especially since I also drastically limit sodium). In addition, some days at work are so busy (whole other issue) that I don't have an actual lunch break--so I need to nibble through the day on things I bring from home.

What kinds of things do you all use as quick/easy (if that exists in this kind of cooking) and in the category of things you could eat on the run? I always have fruit with me, and string cheese, but that gets kind of boring :-) Thanks for your suggestions.
