Being vegetarian means (to me) that I mostly have to prepare all my own meals. (Especially since I also drastically limit sodium). In addition, some days at work are so busy (whole other issue) that I don't have an actual lunch break--so I need to nibble through the day on things I bring from home.
What kinds of things do you all use as quick/easy (if that exists in this kind of cooking) and in the category of things you could eat on the run? I always have fruit with me, and string cheese, but that gets kind of boring :-) Thanks for your suggestions.
