here is my favorite recipe for a basic very filling vegetable soup that has about 50cals/cup! Whoa!!
You just can't beat that. If you are trying to lose weight - this is the soup for you!
Laura’s Garden Vegetable Soup
Saute first 5 ingredients in 1 TB olive oil
1 1/2 cups onions
2 garlic cloves, minced
1/2c apple cider vinegar
2 cups diced green cabbage
2 cans of diced tomatoes
Then add the following......
1/2 cup green beans
1/2 tsp. dried basil
1 tsp. dried oregano
salt & pepper to taste
1/2 cup diced zucchini
Lastly stir in 1 can of refried beans ( I personally like it spicy..being a Texan -- I use refried beans with jalapenos)
Cover in water, and bring to a boil. Simmer till done........maybe 30 minutes! =)
Note -- this soup is versatile -- use whatever veggies you like ....fresh are better, or frozen.
Just stick to your base of the first 5 ingredients. You be creative with the choice of herbs!.....whatever you like!
Only 50 calories a cup! .....DO NOT add meat, broth, or carbs....such as pasta, rice and potatoes......the cals increase quite a bit!! =)
