That's a great tip! I am SO sensitive to onions, I bawl when I cut them up.

I also saw a chef show that recommended you put the onion in the freezer 30 min before cutting it and it will take away all the sting and odor... It freezes it slightly but not enough to cause damage to the majority of the onion cells. I haven't tried it yet, but it sounded great.

A chef once told me storing onions in the fridge prevented a lot of the odor from escaping and making you cry. I store mine in the pantry though, habit.

I don't know. I have stored my onions in the refrig since I've been married 14 yrs....I know we go through onions pretty quickly and maybe thats why I've never had any go bad on me or had very few go bad. I can go through onions faster than a bag of apples. I normally have to buy a 3lb bag every week to a week and a half, then 3 or 4 red onions....onion and garlic is in EVERYTHING I make. I'm in Michigan were the humidity can get VERY high...like today. Potato's though go bad on me. We just don't eat a lot of them so before you know it I've got a bag of sprouted potatoes! In the summer though I do have to keep the potatoes on in the basement, it just get too humid otherwise.

The fridge has a pretty high relative humidity (so that everything doesn't wilt or dehydrate). But if you are in a high humidity area (I'm in Central California where relative humidity is probably 10%), the fridge may be better than in the pantry or the counter.

I've also heard that you shouldn't store your potatoes and onions together as they will cause one of them to go bad faster. I definitely know that storing regular potatoes in the fridge will cause them to convert to sugar faster.

My mother told me not to keep my onions in the fridge, lol..she told me that it makes them go bad faster. And I think she is right. Same thing with potatos. I keep them in the bottom cabinet in our kitchen.

I keep my onions in the refrig and the potatos have always been store in the pantry. I go through them so quick, they don't have time to go bad.

I have a little island cart with wire baskets and I keep them in the baskets.

lol...I keep mine in the refrigerator, bottom drawer...it's cool and dry. In the winter when it's colder, I might keep them out in the air, but definitely in the summer they need to be in the fridg...around here anyways. emoticon

Not to be a smart alec, but isn't a fridge cool, dark (when it's closed) and dry?

Actually, we keep stuff in the garage in the winter months, but now that it's warmer, a lot is going in the fridge. We also have a cold storage room down in the basement, and we have some potatoes down there, too. But they're far away, and "outta sight, outta mind," ya know?

they keep longer in dry places, at my restaurants i kept them in Ben's, now i have a camper so i use baskets.
