Healing Recipe of the Week: Broiled Eggplant
Eggplants are amazingly versatile and can be grilled, baked, stir-fried, or added to soups, sauces, and stews. This simple recipe, however, proves that they don't require fussy or elaborate preparation to taste delicious.

2 medium eggplants
Salt
1/4 cup olive oil
Pepper

Peel eggplant if skin is thick or tough. Cut eggplant into 3/4-inch-thick slices. Remove the bitter juices by sprinkling both sides of each slice generously with salt, and arrange in a single layer on several thicknesses of paper towel. Cover with several more paper towels. Top with a baking sheet and weight it with several large cans. Let stand at room temperature 30 minutes, then rinse eggplant and blot dry. Heat the broiler. Brush each slice on both sides with olive oil and sprinkle with pepper. Broil, turning once, until sizzling and tender, about 3 to 5 minutes per side.

Get the Good Fats
The Maker's fats are essential for good health and maximum protection from disease. You'll find them in natural vegetable and animal sources. Many people do not realize that animal proteins and fats often appear together for a reason — we need fat to properly assimilate protein and minerals. Sometimes the old-fashioned way is best. Grass-fed red meat and poultry have nourished humans for thousands of years, and they're still the healthiest sources of protein you'll find. Beef, buffalo, lamb, goat, and venison are loaded with nutrients that protect and enhance the immune and circulatory systems. They contain health-enhancing substances like cysteine, glutathione, coenzyme Q10, carnitine, several B vitamins, zinc, magnesium, vitamins A and D, and healthy omega-3 fatty acids.

Germs don't fly — they hitchhike. They travel when you touch other people's hands (and whatever they have touched) or when you touch surfaces (and whatever was just there). Your hands come into contact with bacteria and other infectious organisms on hundreds of surfaces daily. , including other people's hands (and whatever they have touched).Surprisingly, more than 90 percent of the germs on your hands reside under your fingernails. (The same is true for allergens and environmental contaminants.) And it is difficult to clean this area simply by washing your hands.

These germs easily enter the body through the nasal passageways or tear ducts when we touch our eyes or nose — which we do at least twenty times a day. Typically, your fingertips come in contact with your eyes and nose more than 12,500 times each year. Each time there is the potential of autoinoculating yourself with germs, allergens, environmental toxins, and viruses.

Autoinoculation of the eyes and nose from contaminated fingertips is particularly dangerous because these areas provide a direct pathway to the upper respiratory tract. (Some diseases enter the body through the mouth, but fluids in the mouth and stomach combat pathogens very effectively.) Walk, Don't Run
The oldest physical activity of the human race can be simply expressed in one word — walking. One of Adam's first tasks was to care for God's garden: a job that required lots of walking. The longest-lived humans in history usually walked everywhere they went. They hunted wild game on foot, built shelters, trailed behind their animals and herds, and cultivated fields at an active pace each day with intermittent periods of rest. They knew nothing about aerobic exercise (which increases oxygen consumption), treadmills, or running tracks, but they were masters at anaerobic exercise — activities that incur an "oxygen debt" through briefly sustained exertion. Subsequent development of our species and the world has demanded even more walking.

Don't waste time looking for parking spots close to your destination — choose a spot far away and walk there. You're getting healthful exercise while you're doing an errand. Forget the elevators and escalators — take the stairs, or take a walk on the beach or to the corner store. Ride a bicycle, stroll through your neighborhood, and "walk the mall" when the weather doesn't cooperate with your exercise plans. A brisk two-mile walk (with long strides and vigorous arm movements) every day increases enzyme and metabolic activity and may increase caloric burning for up to 12 hours afterward!

The olive branch has symbolized peace throughout history, and olives and olive oil have been used as powerful remedies for a wide variety of ills. Olive oil is one of the most digestible of all fats. A diet rich in olive oil contributes to longevity and reduces the wear and tear of aging on the body tissues, organs, and the brain. It reduces the risk of heart disease and cancer, and it can protect against stomach ulcers.

I believe high-quality extra-virgin olive oil should not be used in cooking, though, as some of the nutrients in olive oil become less effective when heated. For that reason, I recommend that it be mixed into food once the food has cooled.

How to Get Sick: Swallow Your Food Without Chewing Properly
Is not chewing well making you sick? Chewing is extremely important to proper digestion. The chewing reflex signals the body to release saliva containing the salivary enzyme ptyalin, a form of amylase, which begins to break down carbohydrates. Parotid glands behind the ears signal the thymus gland to produce T-cells just in case the food contains toxins or pathogens. The ultimate goal of the process is to deliver food to the stomach in a liquid state. I'm convinced that my habit of wolfing down food in chunks contributed to the development of Crohn's disease in my body.

Horace Fletcher, who lived in the early 1900s, had a wasting disease known as Addison's disease, which produced major digestive problems and weight loss. Mr. Fletcher allegedly cured himself by chewing each mouthful of food 35 to 50 times. His story inspired others to chew their food thoroughly; they called themselves "Fletcherizers." Don't go calling yourself a "Rubinizer," but I do recommend chewing each bite 25 to 50 times or as needed — especially when eating foods high in carbohydrates such as grains, sugars, and starches.

Isn't that what we say to children? Well, adults might need some reminding as well. Chew your food thoroughly — always when sitting down. It's also smart to avoid watching TV, arguing, or doing something that requires concentration. You'll save yourself a tummy ache later in the day.

Proper hygiene is as essential as diet and exercise are for your optimum health. You can significantly reduce infections, allergy attacks, and other negative health conditions by cleansing your body of toxins, pollutants, allergens, and disease-causing germs.

Long before proper washing became the norm, God set forth a biblical hygiene system that hands be washed before meals and at other key times to ensure cleanliness. Today, with the increase in contact among people via trains, planes, and automobiles, we need to be even more vigilant about the spread of germs and illness. When we don't wash our hands frequently enough, we pick up germs from other sources and then infect ourselves by touching our eyes, noses, and mouths. Autoinoculation of the eyes and nose from contaminated fingertips is particularly dangerous because the eyes and nose provide a direct pathway to the upper-respiratory tract.

Stop the spread of germs by washing frequently before eating, when preparing food, after using the restroom, when you or someone else is sick, and, as always, when your hands are dirty!

As bad as sugar can be in its various forms, artificial sweeteners are worse! Some are downright deadly because of their carcinogenic properties. Also, they are used in such high-volume products as diet soft drinks and sugar-free foods. Chief among sinners is aspartame, which is marketed as NutraSweet or Equal. Renowned diabetes expert Dr. H. J. Roberts believes there is a clear scientific link between aspartame and increased incidence of brain tumors, seizure disorders, chronic headaches, and hyperactivity in children. As for saccharin, the "cancer-causing" warning labels still apply. The newcomer on the block is sucralose (used in Splenda), but the jury of scientific research still seems to be awaiting further testimony on this one. (If the Maker didn't produce it "as is," then it probably isn't much better than the other synthetic sugar substitutes.)

This common ingredient for modern do-it-yourself "picklers" was so historically valued that the ancient Israelites were required to tithe from their supplies.
