I use the egg yolks for ice cream base. I make ice cream for my family all the time in the summer. I have been experimenting with low fat, low sugar recipes. The yolks work better for the ice cream base than whole eggs do.
On the flip side, when I have too many egg whites, I collect them and then make angle food cake. I have several recipes, including a chocolate one.
