Don't have the deft touch in the kitchen. Wrap with seared onions and green peppers. Egg whites, bacon bits, and cheese.

I'm making a different kind of wrap today: the wrap is slightly cooked eggplant, then a tomato/seed/nut filling is spread before wrapping. They look gorgeous. I'm going to feel special, like I'm eating appetizers at a party.

I think I WILL take to a luncheon party on Thursday.

NOTE: Don't bother making them. i thought they tasted okay, but I was not able to make the pretty wraps in the picture. I couldn't cut the egg plant thin enough and when I cooked it, it fell apart and there was no way they were going to roll into a wrap . So I turned everything into a chopped up mess, half cooked on the bottom of the bowl, and the raw things (tomatoes, almonds, hemp seeds) on the top.

It looked horrible, but tasted delicious. I'll probably make this again, but just chunk the egg plant and stir fry it with everything else.

If you have any suggestions for me for the eggplant becoming a wrap, I'm all ears.

The recipe gives all the parameters they followed to develop the recipe!! Gotta love Naked Food Magazine!!!

Reheated a bake potato from yesterday's dinner, mixed some cheese, guacamole, and hummus with turkey pepperoni in a low carb tortilla. Not too bad.

My entry for this challenge is

1 Extreme Well ness Spinach Wrap
1 Tablespoon almond or peanut butter
1 grated apple, pressed to remove excess juice (you can drink it)
mixed with
a sprinkle of cinnamon

Just before lunch, Spread the wrap with the nut butter. Spread out the apple cinnamon.
Wrap and eat. Yum!!

If you are packing for lunch, take the items packaged separately and assemble just before eating. Take a spoon and an extra napkin. Delicious, but can be a little messy.

I had another low carb wrap with egg whites, fat free cheese, black and blue Angus burger, guacamole, and salsa. What has lunch been reduced to?

Ate a wrap yesterday. Had some kale and baked it with lemon and garlic. Ate it with my smoked salmon, cheese, and low carb tortilla.
